Seeking LC pumpkin pie and or cheesecake

I am on a 40 carb pre-op diet now and am seeking a low carb pumpkin cheese cake or pie. I hear so much about baking with splenda leaving an aftertaste, that I wanted to see what others find better. Thank you for all your help.

I've never baked with anything but sugar, waht about trying that truvia or a combination of a couple.Test small batches first so you don't waste your time and money!!

I've had great luck cooking with Stevia in the Raw...it comes in a large bag and has instructions on measurements of stevia vs. sugar. I can't find the recipe but my mom made some AMAZING pumpkin pie (without the crust) for me for thanksgiving. The truvia is a bit pricy to use in recipes and the Stevia in the Raw was much cheaper and actually tasted good! I would suggest using a little more than they recommend though.

Spent a day on the low carb recipe sites and found oodles of recipes I want to try. Here is a recipe you might like. :D

Low Carb pumpkin cheese Cake

Introduction

Oh My Gosh Is This Good

Minutes to Prepare: 15

Minutes to Cook: 55

Number of Servings: 8

Ingredients

16 oz cream cheese

6 eggs

1/2 cup sugar free maple Syrup

1 cup canned unsweetened pumpkin

3/8 tsp Stevia extract powder

1 tsp cinnamon

1/4 tsp nutmeg

Directions

Preheat oven to 350.

Combine all ingredients in a mixer and blend until smooth.

Pour into a deep dish pie pan that has been sprayed with non stick cooking spray.

Bake for 50 - 55 minuts or until center is set.

Remove from oven. let cool then chill completely.

You may serve with whipped cream but be sure to adjust nutrients
