anyone have anymore delish low fat crockpot recipes?

Slow Cooker Red Beans and Rice

3 cups Water

1 cup dried red kidney Beans

1 cup chopped onion

1 cup chopped green bell pepper

3/4 cup chopped celery

1 teaspoon dried thyme

1 teaspoon paprika

3/4 teaspoon ground red pepper

1/2 teaspoon black pepper

1/2 (14-ounce) package turkey, pork, and beef smoked sausage, thinly sliced (such as Healthy Choice)

1 bay leaf

5 garlic cloves, minced

1/2 teaspoon salt

3 cups hot cooked long-grain rice

1/4 cup chopped green onions

Combine first 12 ingredients in an electric slow cooker. Cover with lid; cook on high heat for 5 hours or low heat for 8 hours. Discard bay leaf; stir in salt. Serve over rice; sprinkle servings evenly with green onions.

Yield: 4 servings (serving size: 1 cup bean mixture, 3/4 cup rice, and 1 tablespoon green onions)

Slow Cooker Beef Stew

2 tablespoons uncooked granulated tapioca

1 tablespoon sugar

1 tablespoon garlic powder

1 teaspoon salt

3 (5.5-ounce) cans Tomato juice

4 cups chopped onion

3 cups chopped celery

2 1/2 cups (1/4-inch-thick) slices carrots

2 (8-ounce) packages presliced mushrooms

2 pounds beef stew meat

Place tapioca, sugar, garlic powder, salt, and tomato juice in a blender, and process until smooth. Combine the onion, celery, carrots, mushrooms, and beef in an electric slow cooker, and add juice mixture. Cover and cook on high for 5 hours or low for 8 hours - until beef is tender.

Yield: 6 servings (serving size: about 1 3/4 cups)

Slow-Cooker meat Loaf

1 1/3 cup italian style bread crumbs

3/4 pound ground round

3/4 pound ground turkey

1 1/2 cups sliced shiitake mushrooms or mushroom of your choice

1/2 cup grated fresh onion

3/4 teaspoon salt

2 large eggs, lightly beaten

1 garlic clove, minced

2 tablespoons ketchup

1 1/2 teaspoons Dijon mustard

1/8 teaspoon ground red pepper

Combine the crumbs, beef, and next 6 ingredients (beef through garlic) in a large bowl, and shape meat mixture into a 9 x 6-inch loaf. Place loaf in an electric slow cooker.

Combine ketchup, mustard, and pepper in a small bowl, stirring with a fork. Spread ketchup mixture evenly over top of loaf. Cover with lid; cook on LOW for 5 hours.

Yield: 6 servings (serving size: 4 ounces)

JessieBear, you are the queen of cooking. Here's my small contribution:

Cranberry Crockpot chicken (my favorite)

1 16 oz. can cranberries

1 8 oz. bottle French dressing

1 package Lipton Onion Soup

6-8 chicken breasts

Stick it all in the crockpot for about 3 hours on high. I just love this recipe.

Comfort food Chicken

1 bottle mild salsa (I love the Sam's club salsa with this)

1 can black or kidney Beans

1 can corn

6-8 chicken breasts (or whatever fits)

Put half of the salsa, all of the drained Beans and corn in the bottom of the crock pot. Add chicken. Pour remaining salsa over chicken.

I didn't think this recipe sounded very good when I got it, but it's very filling (I think because of the protien content in chicken and beans) and feels like comfort food.< /p>

Here is an awesome recipe. I make it at least 1x a week. The pork is moist, good for a bandster. I'm not banded yet, but hope to be and this will be something I'll make!

Puddin.....the cranberry chicken sounds wonderful! I don't know why, but I've never liked cranberries but in the past few months I want to try everything with them in it? I've also made the other chicken recipe you posted and it's great too. My recipe calls for a can of cr of chicken Soup and I added taco sauce for flavor. The chicken is the moistest I've ever had!!!

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
