NJGirl32 43 Posted May 27, 2011 Found this on another site thought I'd share-I'm not on mushies yet but can't wait!! Top fat-free ricotta cheese with spaghetti sauce and low-fat mozzarella. Bake until bubbly. Mash hot cooked cauliflower together with Greek yogurt and low-fat cream cheese. Cut a hard-boiled egg in half, remove the yolk, and fill the space with hummus. (Smash well with a fork to eat.) Top fat-free refried Beans or pureed black beans with smooth salsa and fat-free plain yogurt, cottage cheese, or sour cream. hopefully soon 13 Posted May 27, 2011 Yep that ricotta "mock" lasagna was great during the mushie stage!! Also did the refried Beans but topped them with taco sauce and light shredded cheddar cheese (melted)...good stuff (used it again after my first fill )
nomorejellybelly 77 Posted May 27, 2011 I've heard about the "mock" lasagne before, but not the cauliflower. Both sound good. I think I need to go buy the stuff to make those. Yummy!
