Pepperoni Chips (lapband food)

Recommended Posts

Just thought I would suggest something for people who have trouble eating potato chips. If you microwave about 15 pieces of small pepperoni slices for 60 seconds they become crunchy and delicious! they only have 150 calories and no carbs. I know it sounds wierd but alot of the stuff we do after lapband is wierd to other people. Did anyone else find wierd foods that work well for the lapband post op diet?

That sounds good! Probably would be tasty with mozzarella cheese on top.

I love those!

I have been making these in the oven with Turkey Pepperoni. Got it from a recipe in one of George Stella's eating low-carb cookbooks. A lot less fat and oil in the Turkey Pepperoni. And I think the flavor is much more intense with the Turkey and cooking it in the oven.

That really sounds good... I will have to try it.

Thanks, Shirley.

Oven Recipe

  • 6 ounces pepperoni, thinly sliced

Directions

Preheat the oven to 425 degrees F.

Lay the pepperoni slices in a single layer on a baking sheet and bake for 8 to 10 minutes.

Remove the pan from the oven and soak up the excess grease by pressing paper towels against the pepperoni chips. Return the pan to the oven and bake an additional 2 to 4 minutes, until the pepperoni slices are very crispy.

Serve as a snack anytime or use in place of crackers for dipping or for topping with your favorite cheese! They'll stay fresh and crispy for 1 to 2 days if you store them in an airtight container.

I use Turkey Pepperoni. I don't have to stop in the middle to get the grease off. I just cook for 10-12 min.

Thanks for the recipe, and the tips.

Just been waiting until time for my consult with my bariatric surgeon. It's scheduled for Jan 9th. Turns out I won't actually be seeing him. Apparently it'll be with his P.A.             Not sure what to expect. I thought this is where the surgeon would discuss the best surgery option for me. For years I had my heart set on the sleeve, but I've read so many people have issues with reflux - even if they've never had it before - that they've had to be revised to the bypass. I already deal with GERD & take 40 mg of Omeprazole daily, so I started studying about bypass and honestly, it seems like it might be the better choice for me. How can we discuss surgery options if the surgeon is not there?
What happened at your first consult? Trying to get an idea of what to expect, or maybe I should say, what NOT to expect.
