thejaketucker 1 Posted May 22, 2011 Just thought I would suggest something for people who have trouble eating potato chips. If you microwave about 15 pieces of small pepperoni slices for 60 seconds they become crunchy and delicious! they only have 150 calories and no carbs. I know it sounds wierd but alot of the stuff we do after lapband is wierd to other people. Did anyone else find wierd foods that work well for the lapband post op diet? Georgia83 0 Posted May 22, 2011 Kool will try. You can use a cheese skirt for a taco salad instead of a shell.lol
reverie 49 Posted May 22, 2011 That sounds good! Probably would be tasty with mozzarella cheese on top.
GSORob 1 Posted May 23, 2011 I love those! I have been making these in the oven with Turkey Pepperoni. Got it from a recipe in one of George Stella's eating low-carb cookbooks. A lot less fat and oil in the Turkey Pepperoni. And I think the flavor is much more intense with the Turkey and cooking it in the oven.

GSORob 1 Posted May 23, 2011 Oven Recipe 6 ounces pepperoni, thinly sliced Directions Preheat the oven to 425 degrees F. Lay the pepperoni slices in a single layer on a baking sheet and bake for 8 to 10 minutes. Remove the pan from the oven and soak up the excess grease by pressing paper towels against the pepperoni chips. Return the pan to the oven and bake an additional 2 to 4 minutes, until the pepperoni slices are very crispy. Serve as a snack anytime or use in place of crackers for dipping or for topping with your favorite cheese! They'll stay fresh and crispy for 1 to 2 days if you store them in an airtight container. I use Turkey Pepperoni. I don't have to stop in the middle to get the grease off. I just cook for 10-12 min.
