mattie7632 24 Posted April 22, 2011 I'm all about pre-cooking healthy stuff so I have Protein meals on hand. Some of you might remember my "cabbage meals" I've posted about. Well, here's my latest and OMG it is SO GOOD!!! Taco Spinach salad Pre-cook about a pound or so of ground turkey or lean ground beef, add taco seasoning. This is your meat topping. Have on hand shredded mozarella, grape tomatoes, lite ranch dressing, black olives if you like. Add up to 4 oz taco meet over non-cooked spinach leafs to start the salad (I prefer baby spinach-organic as it lasts longer and has more nutritional value) Sprinkle with mozarella, add tomatoes and olives to taste, Add Salad Dressing or salsa to taste It is delicious, filling and fits the diet mode!
