Stuffed Portabella Mushroom

Ingredients:

2 large whole Portobello mushrooms - Stems removed

1/2 Cup Marinara (I used Giada DeLaurentis' Roasted Garlic Marinara, since it only has 9 carbs per 1./2 cup)

1/4 cup chopped white onion

1/3 Cup Smart Ground - Original: http://www.lightlife...tgroundoriginal

If you haven't used Smart Ground, try it! It's the consistency of ground beef but no fat and it takes on the flavor of whatever you cook it in)

6 Artichoke hearts - chopped

1/4 cup Reduced Fat mozzarella

Olive Oil Pam

Any seasonings you like. I used salt, pepper, garlic powder and parsley

*Preheat over to 350

*Saute the artichokes and onion in a pan on Medium

*Reduce heat to medium-low and add marinara, Smart Ground and seasonings to taste

*Lay Mushrooms on their backs to stuff them

*Stuff with onion/artichoke/Smart Ground/Marinara on the mushroom (divide the mixture in half for each mushroom)

*Sprinkle the cheese on top - dividing the 1/4 cup in half to go on each mushroom

*Place on baking sheet and bake in oven for about 10-15 mins

Nutritional Information

I figured the value for 2 mushrooms and divided it in half for a serving of 1 stuffed mushroom

205 Calories

5.8gms Fat

22.4gms Carbs

18.7gms Protein

If you can only eat half a mushroom, then divide my totals by half. This is a little high on the carbs than I usually do, but it's SO delicious. I might change the marinara to just diced tomatoes or roasted red peppers. The carbs are more coming from the mushroom and artichoke than the marinara.

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!
