isit5yet 37 Posted April 22, 2011 Ingredients: 2 large whole Portobello mushrooms - Stems removed 1/2 Cup Marinara (I used Giada DeLaurentis' Roasted Garlic Marinara, since it only has 9 carbs per 1./2 cup) 1/4 cup chopped white onion 1/3 Cup Smart Ground - Original: http://www.lightlife...tgroundoriginal If you haven't used Smart Ground, try it! It's the consistency of ground beef but no fat and it takes on the flavor of whatever you cook it in) 6 Artichoke hearts - chopped 1/4 cup Reduced Fat mozzarella Olive Oil Pam Any seasonings you like. I used salt, pepper, garlic powder and parsley *Preheat over to 350 *Saute the artichokes and onion in a pan on Medium *Reduce heat to medium-low and add marinara, Smart Ground and seasonings to taste *Lay Mushrooms on their backs to stuff them *Stuff with onion/artichoke/Smart Ground/Marinara on the mushroom (divide the mixture in half for each mushroom) *Sprinkle the cheese on top - dividing the 1/4 cup in half to go on each mushroom *Place on baking sheet and bake in oven for about 10-15 mins Nutritional Information I figured the value for 2 mushrooms and divided it in half for a serving of 1 stuffed mushroom 205 Calories 5.8gms Fat 22.4gms Carbs 18.7gms Protein If you can only eat half a mushroom, then divide my totals by half. This is a little high on the carbs than I usually do, but it's SO delicious. I might change the marinara to just diced tomatoes or roasted red peppers.
