jay150 5 Posted April 12, 2011 I always loved cheeseburger pie (from the back of the bisquick box) and figured I would share my healthy version: This recipe serves 8. 1 lb lean (93% lean) ground beef 1 large onion, chopped (1 cup) 2 small tomatoes 1 cup fat free shredded cheddar cheese 1/2 cup Original Bisquick mix 1 cup skim plus milk 2 eggs If you want to even lessen the fat and calories more, you can use heart smart bisquick and egg whites Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. In 10-inch skillet, cook beef and onion (season with salt, pepper, garlic powder, etc.) over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Spread in pie plate. Sprinkle with cheese. In small bowl, stir bisquick, milk and eggs with fork or wire whisk until blended. Pour into pie plate. Slice Tomato and cover the entire top of the pie.
