jingleboob 5 Posted March 28, 2011 Posted last week that DH got his cholesterol results back and they're scary high. So along with lipitor he's on a VERY restricted diet... which is actually great for me! It means he's not bringing junk into the house. I've actually lost 6 lbs in the past week! woohoo... I've been going through my wls cookbooks and have found a lot of recipes that are great for him... Best has been Swiss oatmeal. It's so easy, and so good... mix 1/2 cup skim milk, 1/2 cup old fashioned oats (NOT quick oats) and 1/2 tsp cinnamon in conainter- cover and refrigerate overnight. In the morning add 3/4 cup plain ff greek yogurt, 1T flaxseed meal, 1T chopped pecans, 1 cup blueberries and 1 sliced banana (or any fruits you want). Then add splenda until you like the sweetness... makes 3 1-cup servings. so delish!!! I also finally used Quinoa in 2 recipes over the weekend and we are now huge fans! Made a simple veggie pilaf with dinner, and a quinoa cherry and pecan pilaf for Breakfast. I didn't have any issues with it getting stuck either! Share this post Link to post Share on other sites
Melissannde 41 Posted March 28, 2011 I use Bob's Red Mill Steelcut oats frequently. I make mine overnight in a bowl which I set inside my crockpot . So easy, it comes out warm and only 1 bowl to clean. Since no one else in my family will eat it, this works for me. Your recipe sounds pretty good too. Thanks for sharing the recipe @Melissannde - do you just mix according to the regular directions and then put the bowl in the crock-pot? That sounds like a great idea too because I am the only oatmeal eater in my family and I don't like having to clean the pot I cook it in and the bowl I eat it out of. Melissannde 41 Posted March 29, 2011 @ AFMom: yes, I use 1/4 cup of the steelcut oats, and 1 cup of Water ( I suppose you could use milk or other liquids, but I've only done it with water). Put those in a bowl and then put that bowl inside my crockpot. Put the lid on the crockpot and turn it on low. Go to bed and 8 hours later (more or less) it's ready. The texture will be slightly different than oatmeal cooked in a pot, but I like it. If you leave it too long, the top will get a bit crusty, but I just stir it up and I'm ready to go. I add cinnamon, 1/2 of an apple, chopped or sometimes s/f applesauce, a tablespoon of chopped walnuts, a tablespoon of half/half or powdered milk and a dash of salt. @MaineJackie & JinTx: I don't believe you have to cook oatmeal if you let it soak long enough. I do prefer my oatmeal warm though. Cold stuff is difficult for me first thing in the morning. No reason that the "swiss oatmeal" couldn't be warmed up. stateofzen 46 Posted March 29, 2011 Yum, I love quinoa-- I would love to see recipes for additions. Last time we stirred in a tiny bit of basil pesto and some fresh parmesan. It was heavenly. The link is actually a review written by Dr. Michael Eades who pulls out some of the basics. Anyway, that's all I'm going to say. Use it (or not) as you see fit. .
