The band stays in unless you have complications. One such complication is where the band moves from the position it was placed in and now is preventing you from swallowing food or liquids. Yes it stays in place once you hit your goal weight. Otherwise you would be able to eat larger meals and would regain all the weight you had lost. Alcohol is a hot topic on this site. Run a search. Most doctors say not to drink carbonated drinks as it can lead to stretching the pouch of stomach above the band. In general alcohol has lots of calories so drinking it will have negative affects on your weight loss efforts.

You don't want to make such a decision blind...do your research.

Based on the info you provided (height/weight), you qualify because your BMI is 40, for your height you should weigh 100-120 lbs. I totally get where your coming from with not wanting to lose too much weight. In high school I weighed about 135 or so, which put me in the low to mid BMI range, but when I got to 150 in college, I was in love with my body because I put weight on in all the right places. With that said, you can lose as much or as little as you like...you are totally in control of your weight lost unlike with other procedures.

The band does not have to stay in forever, if you should decide that you no longer wait the band it can be removed...totally reversable. For complications, I suggest that you do due dilligence and visit lapband.com or realizeband.com; you'll find everything you need to know and a comparaison of other WLS procedures. And yes, you can drink liquor...whether you should or not is another discussion...everything in moderation.

I would not worry about looking to thin with the band. Once you are done with the liquid diets and everything following surgery the weight loss will dramatically slow down to an average or 1 to 2 pounds per week. It's nothing like the gastric where you lose 100lbs in less than 6 months and look like a race horse in the face until your body catch up. Now, there are some people that accomplished this but they are usually over 250 plus pounds and spend some time in the gym as well.
