Dinner idea

Today I made some yummy dinner and I just had to share it with you :)

Stuffed peppers, mashed sweet potatoes, steamed broccoli and baked apples.

I stuffed the pepoers with ground turkey chopped onion, garlic and mushrooms. I used 1 egg and some whole grain rice (1/2 cup for a lb and a half of turkey) and some low carb homemade bread crumbs ( I make a bunch and store fir later use). Mix all together and stuff inside peppers. I then poured low sodium v8 juice over the top and baked at 375 for 2 hours. You could def put in crockpot to chok all day on low.

Hope you guys enjoy as much as my family did!

Ps....i didn't eat more than my cup and a half of food....and it was hard to walk away! Haha

      The 14th was my day. I am home and recovery is going pretty smooth. They even let me walk out of the hospital. Picture of me in recovery curtesy of my boyfriend lol.

        Neat you have a pic of this day! I was sooo happy to get my surgery. It was well worth it! And I'm not even near my goal. I had surgery Dec. 2!
