Any Vegetarians Here?

Im not a vegitarian but sure do like my veggies. I eat em all, salads included. The only thing I have had a problem with was slow-cooker carrots and I think that is just because I ate them too fast. Brussel sprouts go down just fine and stay there. I have eaten quite a bit, matter of fact that is what I started to eat when I was first allowed solid foods.

I have a great recipe for a vegetarian "meat loaf", if anyone is interested. I have shared it with non-vegetarian friends, and they all love it. Gave it to one of my volunteers at work whose husband has heart problems, and he even liked it. It's one of our family favorites.

Cottage cheese Roast

4 eggs

1/4 c. soy sauce

1 T. onion powder

2 24-oz. cartons cottage cheese

1 c. chopped or ground nuts (I use pecans)

8 cups Special K or Rice Krispies

Beat the eggs, add everything but the Cereal and mix well. Then add the Cereal and mix again. Put in 9 x 13 pan and bake 1 1/2 hours at 325.

You could use whatever seasoning you want instead of the soy sauce if you are watching sodium. You can use lowfat or fat free cottage cheese, but I usually use one lowfat and one regular carton because all lowfat makes a softer loaf, and I prefer it more solid for a meatier texture. Walnuts are also good but make a lighter colored loaf. My son is diabetic, and at one time we figured the exchanges out as 2 starches and 2 Protein exchanges if it's cut into 12 pieces.

Thank you leenerbups for the links and the suggestions. I need to start digging through my old vegetarian recipies again and get making them! I still receive my vegetarian magazine and have gotten some awesome recipies from there. I am going to be making a Flaxseed bread here shortly from the last one that I got.

Thanks again, and I'll try my hardest to go back to my former vegetarian ways. Maybe it'll even help in my weightloss.

Can never go wrong with Beans and cornbread!! Of course when i was growing up we had to throw in some fried tators and some dewberry cobbler(man could my great-grandmother make this) with heavy cream for dessert...dang no wonder I am fat! *sigh* Granny Jones and Granny, I sure miss you ladies and your awesome cooking!

Like most everyone else, I've been able to eat most all veggies. I have noticed that when I steam them at home....I cut my brussel sprouts up really small. The broccoli top and asparagus tops are the easiest for me to eat if I'm feeling a little "clamped down". In those situations, I stay away from the stalks...they have occasionally been a little difficult.

        Fairlife Core are by far the best. They taste just as they are - chocolate milk. You can either get the 26 grams or the 42 grams (harder to find and more expensive).
