It's time for Pureed and Soft Food! Recipes Please!

So I am officially two weeks out from my December 6th surgery. I've managed to survive 16 days of liquid diet and I am down 12 pounds.

I start on soft foods after I get clearance from my doctor tomorrow and I'm wondering if anyone has any recipes that the particularly loved. I'm trying to put together a cookbook that I can pass on to friends that are considering the surgery.

I sorta created a self imposed challenge that I'm calling "Around the Whirled in 14 days" I'm going to try and create an ethnic or regional dish that falls into the soft food / pureed food category so if ya got any I'd love to try them.

So far I have:

Thai Land - Tom Kha Kai Soup

Italian - Creamy Polenta with Eggplant Parmesan

Mexican - Chile Relleno Casserole

Ethiopian - Kik Alicah (Yellow Split Pea with Berbere)

Irish - Colcannon with Corned Beef

Argentina - pumpkin Stew Puree

Persian - Fesenjan (Chicken Pomegranite Puree on pureed brown rice)

French - Potage Bonne Femme (Carrot, leek and potato soup)

Oaxacan - Chiles en Nogada (Stuffed Peppers deconstructed in Walnut Cream cheese sauce drizzled with Chile Pomegranite reduction)

Japanese - Sashimi Tower

Louisiana - Etoufee

I need more suggestions.

I'd do some nice Texas BBQ Chili. You can really do it however you'd like, but you probably want to use either a chuck roast or a brisket, since they have connective tissue that renders/purees well. Not exactly the healthiest cuts of beef, but losing weight at this stage in the game isn't the goal, healing is...

Chili is a great idea, especially with the crazy weather we're having right now in los Angeles.

Watch out for spicy food right now. At 3 weeks out I tried to puree a Shepard/s Pie. It came out great, but it was too spicy for my tender tummy, The instructions from the doctor said to stay away from spicy foods and Tomato based foods for a while. I guess they know what they are talking about.

So fancy! haha. Or yea maybe just ground beef and mashed potatoes for shepards pie?

For the chili, try Turkey Chili :) Italian could also do baked ricotta with marinara sauce

My suggestion is Hummus from....wherever hummus comes from! I think it's a Mediterranean thing. I grabbed the first recipe I found online that looked like the one I use..it is usually served with pita bread, but I like it straight from the spoon. It might be good on cucumbers. The garbanzo Beans have protein!

Ingredients:

  • 1 16 oz can of chickpeas or garbanzo beans
  • 1/4 cup liquid from can of chickpeas
  • 3-5 tablespoons lemon juice (depending on taste)
  • 1 1/2 tablespoons tahini
  • 2 cloves garlic, crushed
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil

Preparation:

Drain chickpeas and set aside liquid from can. Combine remaining ingredients in blender or food processor. Add 1/4 cup of liquid from chickpeas. Blend for 3-5 minutes on low until thoroughly mixed and smooth.

Place in serving bowl, and create a shallow well in the center of the hummus.

Add a small amount (1-2 tablespoons) of olive oil in the well. Garnish with parsley (optional).

All American: I loved having instant mashed potatoes with canned chicken (blended) with fat free chicken gravy. Warm and yummy!

cool.gifbiggrin.gif I'm sooo loving the Sashimi Tower right now.... but I got to be good and wait.. I just had my procedure done on the 17th of Dec.

I'll speak to my mom and see if there is any traditional mexican food that falls under this category and I'll gladly share with you and everyone else on here

That sounds so good! Especially since I'm not able to eat as much right now. I am going in for a slight unfill tomorrow. Yeah. Been to tight for over a week! Ugh. But I need to change things up and I will be trying that with the gravy. I will let you guys know how it taste. If you were selling this cookbook I would buy it with no problem. Test Kitchen item number one!

This one was really great. Had a taste similar to a traditional thanksgiving stuffing. I attribute that to the addition of a teaspoon of dried, ground sage

Here's a link to the Recipe. It was actually really good, but be sparing with the meat and remove all the fat. It's yummy but high in calories and really salty.
