I use 98% lean ground turkey with a taco seasoning packet and I also substitute Greek yogurt for sour cream. The meal is high in Protein (ground turkey, refried Beans w/cheese, and Greek yogurt) and I'll get my veggies from the lettuce and Tomato. It's one of our favorites! msdv 5 Posted October 17, 2010 I made some shrimp scampi today. I was going to make it with some whole grain Pasta but I decided to put it over brown rice instead. I was only able to eat 2 shrimps with about 2 tbsps of brown rice before I started feeling it up in my throat. My favorite one pot meal is Perdue shortcut chicken breast strips ( I keep these in the freezer all the time) with some fat free cream of mushroom Soup and a bag of frozen mixed veggies. I simmer that all down together... of course i season it with a little seasoned salt , garlic powder and black pepper. I serve it over brown rice and sometimes sprinkle a few of those crispy fried onions on the top of it. Yummy!!! Dee Share this post Link to post Share on other sites

ElfiePoo 109 Posted October 20, 2010 With the lovely chilly fall weather I've been in a Soup kind of mood -- chicken and rice, chili, tortilla soup, etc. To adhere to the guidelines for the band, I'll make sure to ladle about 3/4-1 cup of filling (rice, chicken, vegies) into my bowl and then ladle in the broth. I drink the broth first, then finish by eating the solid stuff. This way I'm not drinking with my meal. :cursing: With chili, I just ladle out 1 cup and eat as is. My family eats exactly as I do and meals are usually pretty much the same - Protein fixed in a variety of ways (baked, broiled, steamed or Foreman grilled), steamed or roasted vegies and potatoes, rice, Beans or Pasta.
