I was inspired to bite the bullet and try mashed cauliflower. I cheated and bought the steamer frozen kind. I mashed in mini chopper w/ some RF sour cream. I was pleasantly surprised and enjoyed it.

I think I need a better food processor as it still had some pieces in it and was not smooth. My question is am I expecting too much from the cauliflower? Is it supposed to be creamier? I read on some low-carb sites that people add some instant flakes (low carb type) for texture.

Any suggestions????TX

I've eaten mashed cauliflower at restuarants & it had the consistency of mashed potatoes. I also eat it steamed,no problem with the band.

All I gotta say is YUCK! I made it one time even the dog wouldnt touch it...I just havent found the perfect recipe for mashed cauliflower putting sour cream in it does sound good though...If you find a really good recipe please post I am up for trying it again (I think)...:)

I really like mashed cauliflower. I used to eat a lot of it when I was doing the South Beach Diet. I need to make some again and add the sour cream. That would be yummy. Also, I love to "season" my food now with the HyVee No Salt spice. It's is really yummy.

I love steamed mashed cauliflower and have eaten it for years.

Steam WHOLE cauliflower in microwave until soft, do not add Water. Add ff spray butter and mash or blend until mushy. LF sour cream is good too. It tastes better steamed whole so u can get the full flavor.

Maybe I need to try cooking it in the microwave I put it in a steam basket on the stove top could that be why it was nasty?

I will keep trying and play around with it. I saw a recipe using cream cheese. I only bought 1 bag of the easy steamers in case it was disgusting. Back to the supermarket.

If I discover a good recipe I will def post.

I do find if I leave it whole and zap it, it has a better flavor. But that's just me. I haven't started eating it yet, and can't wait until I can.

Tracy..i tried it one time and it was pretty good..i mean you know it won't taste like potatoes..lol i did it like i do potatoes though..boiled it then used a masher with a lil bit of butter/salt/pepper...i could eat it again but my family wasn't too excited about them!

I tried this last night and I won't be having it again-- it did not taste good to me.

But, I love plain old steamed cauliflower with a little ff american cheese, so I'll make do with that. But as a low-carber, I was looking forward to "potatoes".

I have made it with the chive and onion cream cheese and regular cream cheese (both low fat or fat free of course) and mix in 75% ff shredded cheese and stick it in the oven. OMG!!! Taste like potato casserole. and 13g of Protein per 1/2 cup.:thumbup:

Great recipe! I also use the steam able cauliflower with garlic flavoring(think its birds eye or green giant). I also bought a Ninja food processor with the blender and little processor and it has been a God's Send. I got the recipe from the cookbook eating well after weight loss surgery. Its a great book and real inexpensive.

4 cups cauliflower

2/3 cup skim plus

2 tablespoons fat free sour cream

Spray butter

Cook cauliflower and puree. Add sour cream and milk and puree some more. Put in micro dish and spray with a little butter micro for two minutes and eat.

adding sour cream or chream cheese wow calories you can steam it season it and the make a patty and fry it with pam in a non stick pan and it is really good but u can make mashed pot with spray butter and nofat half and half and they are great.

Not really. Made the way I mentioned above you are only talking about 70 calories for a 1/2 cup serving. Obviously your way is probably like 10, but when it is the mushy stage 70 calories is no big deal. You just want new and different ways of making things during this stage.:thumbup:

      Just been waiting until time for my consult with my bariatric surgeon. It's scheduled for Jan 9th. Turns out I won't actually be seeing him. Apparently it'll be with his P.A.             Not sure what to expect. I thought this is where the surgeon would discuss the best surgery option for me. For years I had my heart set on the sleeve, but I've read so many people have issues with reflux - even if they've never had it before - that they've had to be revised to the bypass. I already deal with GERD & take 40 mg of Omeprazole daily, so I started studying about bypass and honestly, it seems like it might be the better choice for me. How can we discuss surgery options if the surgeon is not there?
      What happened at your first consult? Trying to get an idea of what to expect, or maybe I should say, what NOT to expect.
