i just learned that i like eggplant so im wondering what are some good band recipes for eggplant(still hate zucchini tho)

Hello, to make a nice eggplant parmigiana like a lasagna, I microwave the eggplant after I have cut it up lengthwise for about 5 minutes (about 4 long pieces), lightly fry with pam cooking spray so there are some nice char marks, layer with crushed tomatoes (they need a bit of artificial sugar) or low fat spaghetti sauce, low fat mozzarella cheese, bake in oven for about 10 minutes on 350 or even just leave on stove on low setting for about half an hour. I usually put a bit of grated parmesan cheese over the top. You may need to tweak or alter cooking times. The eggplant should be pretty soft after you take it out of the microwave or it won't taste good.

I have never tried eggplant, but love lasagna! I am going to try this tomrrow for dinner. BTW you are such an inspiration on the May challenge. You must have the cleanest house. lol

I was only doing enough housework to make it LOOK nice if anyone came over. After all I just had surgery, and needed to concentrate on my weightloss. (this is my excuse) After reading your post I relized I really need to do both. My husband thanks you!

thanks beachcitygirl! - the house isn't too bad but is on the big side and so is the property so there always seems to be something to do. With the lasanga style eggplant put what seasonings you like - eggplant always needs some salt and I usually season it also with garlic powder. Take care!

I like to take eggplant and slice them fairly thin, coat in eggwhite, dredge through italian style bread crumbs and bake in the oven on 350 until golden/dark brown. I eat them as is but my husband thinks its a sin to eat eggplant without sauce and mozzarella cheese dripping from it. :smile:

This is the basis for eggplant lasagna. use the eggplant after this prepation and then layer it like you would a lasagna.

My husband makes eggplant for me often - Eggplant Parmigiana with Alfredo sauce is my absolute favorite dish in the world. His tip: slice the eggplant into the size you'd like to use (he slices them across into about 3/8" thick circles). Then salt them and allow them to sit out for about a 1/2 hour. It "sweats" the eggplant and removes a lot of the bitterness. After they've sat for 1/2 hour, rinse them in cold Water and then pat dry with a paper towel before cooking.

I'm telling you - try it once with the Alfredo instead of spaghetti sauce... it's absolutely to die for. Hooray for eggplant!

Was just banded on Tuesday - it will be a while before I enjoy eggplant again solid. Enjoy it for me! :thumbup:

I make eggplant Lasagna too. Cut eggplant in about 1/4 inch circles or length wise...put sauce on bottom of baking dish the eggplant and keep layering with waterever you like (cheese/ ricotta/ hamburg/ eggplant) put tinfoil bake 375 deg

45+ minutes until eggplant soft (DO NOT put cheese on top till very end or it will stick to foil) uncover add top layer cheese crank heat till top is bubbly and golden bown. mmmmmm~

I also make the eggplant lasagna. I make eggplant enchiladas too the same way. I prefer the green chile enchilada sauce and just substitute the eggplant for the tortillas. Gets the kids and hubby to eat the eggplant and still feel like they are getting enchiladas.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
