How to you cook your fish?

I don't like fish, I never have. I can tolerate tilapia and other non fishy fish, but I rarely eat it because I just don't like it. Since my doctor thinks chicken, fish, turkey and tofu are the only acceptable forms of meat (with egg and cottage cheese rounding out my choices for protein) I guess I'm going to have to start eating fish.

So how do you prepare it so it tastes good, and also so it doesn't get boring? I bought cedar planks for the grill and am going to try that, but need more suggestions, including for inside cooking since I can't grill in the winter.

I love most fish, but really don't care for Tilapia as it is pretty tasteless in my opinion. King Salmon is my favorite. I like to grill mainly if it's a nice firm fish. You can also bake, broil or saute in a fry pan. It really depends on the fish as to what the preferred cooking method would be.

A really easy way to cook almost any fish is to wrap it in foil with seasonings and bake. It keeps the fish very moist.

Fish is a staple around here, both because it's good for us and because it's FAST.

The cedar planks for grilling really do add something to the flavor, but we only grill every couple of weeks or so.

Let's see. Trout and salmon are both frequently for sale at costco at a good price, so I'll pick up some and split it into two meals. I usually just sprinkle some smoked salt like Salish on it and throw it in the oven for 10-12 minutes at 435 degrees. We like ours on the rare side, so if you prefer this kind of fish more well-done, increase time.

I'm a huge fan of bulk purchasing salts (and other seasonings), especially for experimenting with new flavors. If you have a place you can buy spices by the ounce, where you scoop it into baggies yourself instead of having to buy whole jars, give it a shot!

Another favorite recipe for salmon or trout is to saute' some almond slivers or chopped macadamias in olive oil, and bake the fish. When the fish is done, put the nuts over the top of the fish. Sprinkle with chopped cilantro and a dash of lime juice. Yum!

We pan-sear tuna with blackened spices, bake orange roughy with tomato/fresh basil/sea salt mix, grill or bake halibut in foil with peppers and onions. Poaching like AllegrasGramma says above is another simple way to get lots of flavor.

I always go for what's on sale, so I pretty much never end up with King salmon (but oh MY it's tasty!). I like the Sockeye salmon least of the salmons. Trout can come in huge fillets or they come in smaller whole (headless/tailless) fish that are great seasoned and then secured with a strip of turkey bacon, like a belt, and grilled. My local store usually calls these "ruby red" trout.

Ok, now I'm hungry, and lunch time is WAY too far away. heheheh :confused:

tilapia is really good i saute mine on top of the stove. i use olive oil. season the fish(i use ms dash)put in pan. then i squeeze a half of lemon on top.that will get rid of the fishy smell.then you take the juices from the pan.pourit over the fish. please try it.hope you fall in love. also salmon.

I'm originally from the North and love haddock or cod, not fishy just nice white and flaky. Because it flakes when cooked, I like to just bake it in the oven in a glass pan lined with foil (easy clean up). I spray on a little butter, add a little lemon juice and cracked pepper and throw it the oven at 400 degs for 10 to 14 minutes.

Now that I live in Florida, I like to grill mahi mahi or tuna steaks on the gas grill. They are a firmer fish and will stay together better on a grill (use Pam spray for grilling also). I still use lemon and cracked pepper to keep it simple, but there are alot of other seasonings and marinades to change it up also. Enjoy, fish is so good for you and great with just a small salad or some fruit.< /p>

We eat Mahi Mahi from Sam's. Not a real fishy fish but good flavor. We roll it in potato buds and fry in a little olive oil. Prior to the lap-band I would not eat fish. Now, I crave it and so we have it often.

I am eating more fish since being banded. I usually buy Tilapia just because I know how to fix it. I will be trying a few other types now that you all have started this thread. Thank you for that.

About my Tilapia. I keep it simple. I spray a bit of Pam or even use some olive oil in a nonstick pan. I add some Mrs.Dash or Lemon Pepper seasoning to each side as it is cooking. Very tasty.

I bake mine in parchment paper (take a large piece of parchment- fold in half - cut out in a half heart shape), open up, place fish, vegies, fresh thyme, lemon on one side, fold back over- seal around the edge by folding over edges several times so the edges are sealed, bake at 375 for about 15 mins. YUM

Don't forget you can actually BBQ "meatier" fish like Salmon, tuna and Swordfish. Keep the seasonings simple prior to grilling and brush on your favorite BBQ Sauce during the last few minutes of cooking. The meatier fish choices also do well with marinades like italian dressing and Asian inspired sauces (soy, ginger, tamari, etc.)

You can get your fish market (or the fish counter at any good grocery store) to grind your fish to make burgers. Salmon and tuna are good options. Mix the fish with breadcrumbs, onions and any seasonings you would put in a regular burger and grill away. These can also be done indoors on a good grill pan.

Tilapia is a great fish to use for Fish Tacos.

Do you like seafood? Shrimp and Scallops are also great on the grill. Crab legs are easy to steam and quick to prepare.

If you want something "crunchy", you can do a baked version of deep fried fish fillets by using something like cod or pollock, breading them in egg, milk and panko breadcrumbs and baking them in the oven. If you like things spicy, add some chili powder to the breadcrumbs. You can also add italian seasoning, cajun seasoning or whatever else catches your fancy.

Don't be afraid to treat the fish like you would a piece of meat. I think you'll be pleasantly surprised!

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
