New Recipe for Dinner Tonight--Chicken Cordon Bleu

So, all this snowy weather has brought out the cook in me LOL

Last night, I did an AMAZING crockpot pepper steak (hubby LOVED it--didn't realize it was healthy!!) and tonight, I'm doing chicken Cordon Bleu. I found the recipe online and tweaked it to be more calorie/fat friendly. Just thought I'd share since lots of us are looking for a little variety (and I am ALWAYS looking for creative options to cook chicken LOL).

Ingredients:

  • 4 skinless, boneless chicken breast halves
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 4 wedges laughing cow Swiss cheese
  • 4 slices Oscar Mayer deli selects ham
  • 1/2 cup seasoned bread crumbs

1. Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.

2. Pound chicken breasts to 1/4 inch thickness.

3. Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.

4. Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

Calories: 280

Fat: 10 g

Protein: 37g

Carbs: 11g

OMG the laughing cow cheese was the BEST idea! The recipe called for regular old swiss which is so high in calories so I switched the laughing cow for it. It was SLAMMING! I made an extra piece to take to work for lunch!!!

Guys, it was no prep time at all and cooked in 35 minutes. Had some steamed veggies on the side and it was purrrrfect!!! The best is using the Perdue perfect portions--each one of those chicken breasts is 4 oz. I'm still a little hungry, but I'll wait a couple of hours and have some sugar free pudding w. fat free cool whip for dessert.

I had a really good day today! Shoveled my butt off, did 100 crunches on the ab lounge and ran a mile! Wish every day could be this good!

its 7 am and i am now craving chicken! lol

Juliansmom this sounds really good will try this weekend!! I wanted to tell you I made the Ranch chicken recipe you posted the other day and it was delicious the chicken was so tender it actually fell apart in the crockpot even my picky hubby raved about it. Please keep posting your recipes :scared2:

      Just been waiting until time for my consult with my bariatric surgeon. It's scheduled for Jan 9th. Turns out I won't actually be seeing him. Apparently it'll be with his P.A.             Not sure what to expect. I thought this is where the surgeon would discuss the best surgery option for me. For years I had my heart set on the sleeve, but I've read so many people have issues with reflux - even if they've never had it before - that they've had to be revised to the bypass. I already deal with GERD & take 40 mg of Omeprazole daily, so I started studying about bypass and honestly, it seems like it might be the better choice for me. How can we discuss surgery options if the surgeon is not there?
      What happened at your first consult? Trying to get an idea of what to expect, or maybe I should say, what NOT to expect.
