This is basically a variation of my recipes I developed on Fluffy Chix Cook years ago. It always aggravates me when cooks don't give the inspiration link who inspired their version. It's just common decency. 😕 https://fluffychixcook.com/coconut-flower-oat-fiber-pyslli-wraps-atkins-owl-friendly/ https://fluffychixcook.com/basic-psylli-wraps-low-carb-gluten-free/ https://fluffychixcook.com/egg-fast-recipe-lo-lo-psylli-wraps-version-4-induction-grain-free-gluten-free/ https://fluffychixcook.com/coconut-flour-oat-fiber-psylli-buns-and-wraps-from-shannon-harding/ https://fluffychixcook.com/page-4-wraps-low-carb-keto-tortillas-induction-friendlygluten-grain-free/ https://fluffychixcook.com/keto-boboli-copykat-low-carb-keto-gluten-free/ -

I finally found the Aldi keto bagels! They are not nearly as dense as regular bagels and I don’t mind because I still cannot eat dense breads. -

This is what I'm making for Thanksgiving "maybe" unless I do smashed roasted cauliflower instead. The difference is that I won't use as much butter and will be making turkey tenderloins cooked the way I cooked the chicken breasts. Yum. And so dang easy!!! I won't even miss the loads of butter! https://fluffychixcook.com/pumpkin-in-browned-butter-aka-refried-pumpkin-keto-allergy-kiss-day-2/ Here's the link to the smashed roasted cauliflower: https://fluffychixcook.com/roasted-mashed-cauliflower-aka-roasted-smashed-fauxtatoes/ I make em the same way now post surgery, but I use MUCH less butter and in place of cream cheese I use Greek nonfat yogurt or neufchatel cheese or lite cheese wedges. -

Turkey & cheese sandwich on keto bread. The log says “wheat bread” but it’s their new white bread (it’s just not in the database yet). As usual I use only one slice of bread and slice it into two. Also this sandwich was clearly meant to be a salad in another life. 😂 I’m always shocked when I see that it’s only ~300 cals for this whole thing -

Peanut butter protein yogurt. I am not a fan of yogurt, but every so often I buy it. I found a vanilla keto yogurt. It’s the consistency you of the Greek yogurts. I decided to try mixing it with peanut butter protein powder! It’s sooo good and helps with protein intake. It tastes like a dessert! -

Made this Keto chicken pizza crust this AM (making regular pizza for the fam later and I wanna join in on the fun). It smells DELICIOUS: 350g shredded chicken breast, 1/2 cup grated Parmesan, 2 eggs & seasonings. Baked at 400 for 20 mins. 85 calories & .05g NET carbs per serving (1 serving == 1/8 of the entire thing), plus whatever toppings you add... Will post pics of the final product later...sooo excited! -

Buffalo chicken soup, celery and carrot stick. Homemade blue cheese dressing. A bit high in kcals at 350. Ate all of the soup and the veggies, with only a tiny bit of the dip. Hubby is eating keto right now and was VERY happy 😊 -

That Everything but the Bagel seasoning is the best! I still have a hard time with anything bread related, keto or otherwise 5 mo out. I get my everything bagel fix by sprinkling this seasoning on cottage cheese. Sounds crazy. Tastes like everything bagel with cream cheese, yum!!! -

Been doing the keto diet to lose the required weight pre-op. I tried to figure out how to get all my protein in without going over my carb limit and eating too much fat. This was seasoned chicken, shirataki noodles, eggs, and brussel sprouts. Unfortunately, I couldn't finish the plate (thus not meeting my protein goal). :( Though, I am really not sure why I thought I could! That was a lot of food for one sitting! -

Ok, these are going crazy everywhere on the internet and especially at another site where I read. I know we used to make "protein waffles" in the old days of LC using protein powder, egg whites, and mozzarella cheese. But now they've stealth rebranded to Chaffles! (Those crafty millennial bloggers!) And now I can not help myself and have to make them. I even tried to buy one at Target online and pay to have it delivered today but they are so popular everyone is out of them! So now I have to wait til Friday for it to arrive! Wah! Look at what I bought myself for my birthday pressie! https://www.target.com/p/dash-mini-maker-waffle-aqua/-/A-52912898?ref=tgt_adv_XS000000&AFID=google_pla_df&fndsrc=tgtao&CPNG=PLA_Appliances%2BShopping_Brand&adgroup=SC_Appliances&LID=700000001170770pgs&network=g&device=c&location=9027638&gclid=CjwKCAjwq4fsBRBnEiwANTahcOdi4XMR9dU9M_IJdWTEkfKPZ90Id6ZEUswHepUP8UQRChVJdG9SqhoCgO4QAvD_BwE&gclsrc=aw.ds (link isn't an affiliate link btw) It's a mini chaffle maker (4" diameter!): Here is a popular recipe for them: Chaffles by Kasey Trenum https://kaseytrenum.com/keto-chaffle-recipe/ -

LOL ironically I made Keto dumplings for lunch today. Ive been craving them like crazy but these did the trick! They look very weird, but they tasted just like them. Next time Ill cook them less, some were a little overdone. Each dumpling had a tbsp of ground pork filling and I ate 5 of them. -

Yes! The egg foldover! Love those. But I actually made my original psylli wrap for this one. I'd made them last week and so have them hangin' around lurking and acting shady. Adding the psyllium husks (whole, Now brand) to the egg whites and letting them chillax then frying in a pan til they dry out makes them very tortilla-like. You can even nuke them in 15 second bursts on a paper towel until crisp. Turn them once or twice to dry them on both sides. And you have the equivalent of a psyllium cracker that works for everything from Mexican to Mediterranean. Here's the recipe for the original: https://fluffychixcook.com/basic-psylli-wraps-low-carb-gluten-free/ Here's the link to the recipe index. I have a bunch of versions of this that make it fluffier using different low carb keto ingredients like coconut flour, oat fiber, pork rind crumbs (sssshhh don't judge). Almond Flour Cinnamon Rolls – Low Carb and Gluten-Free Tender, moist, and perfectly cinnamon-y with a biscuit-like texture, these cinnamon rolls are a sweet keto treat! Course Breakfast Cuisine Breakfast Prep Time 25 minutes Cook Time 20 minutes Total Time 45 minutes Servings 8 cinnamon rolls Ingredients Dough: 2 cups almond flour 3 tbsp granular Swerve Sweetener or other granulated erythritol 3 tbsp unflavored whey protein powder 2 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1/2 tsp xanthan gum 2 large eggs lightly beaten 1/4 cup butter melted Filling: 1 tbsp butter melted 2 tbsp brown sugar substitute I used Ideal 1 tsp cinnamon Cream Cheese Icing 2 oz cream cheese softened 1 tbsp powdered Swerve Sweetener or other powdered erythritol 1 tbsp heavy cream 1/4 tsp vanilla extract Instructions Preheat oven to 325F and grease an 8-inch round cake pan with butter. In a large bowl, whisk together almond flour, Swerve, whey protein, baking powder, baking soda, salt and xanthan gum. Stir in eggs and butter until dough comes together. It will be quite sticky. Turn out dough onto a large piece of parchment, and then pat into a rough rectangle. Top with another piece of parchment and roll out to about 10x8 inches. Peel off top piece of parchment paper. Brush dough with melted butter, then sprinkle with brown sugar substitute and cinnamon, going almost right to edges. Starting with the far, longer edge of your dough, gently lift away from the parchment and roll up tightly towards you. Pinch the seam to seal. Using a sharp knife, carefully cut into 8 equal portions. Place in prepared cake pan, just barely touching each other, and bake for 20 to 22 minutes, or until just golden brown. Remove and let cool 10 minutes. For the Frosting, beat all ingredients in a medium bowl and then pipe or spread onto warm rolls. Recipe Notes Serves 8. Each serving has 7.1g of carbs and 3g of fiber. Cheese Stuffed, Bacon Wrapped Meatloaf with homemade Keto ketchup (BFF made the ketchup for me and it tastes just like ketchup - actually better!) One slice (as shown) is 301 calories. I had a whole slice, with about 1 tsp of the keto ketchup (I have no idea what the caloric count of this is, so I'm just going to guess maybe 15 cals per tsp). This meatloaf was crazy filling and I probably ate too much as I am uncomfortably full. Was very yum though!
