    This crown roast of pork stuffed with pork sausage, apples and sage will be the stunner at your Thanksgiving or Christmas table. I first made this recipe last Christmas ... the oohs and aahs from my family and friends were a delight! In addition to the holidays, I sometimes make a crown roast for Sunday dinner.     It's time for my walk. I need to get it in before the heat comes. It's now 6:00 AM.
    For the past month and a half I have been walking daily, and now I am up to 3 miles. It has helped me with toning up my legs. I find after my morning workout, I have lots of energy for the day - it keeps me positive.
     
    I have a lot of toning to do. One of my biggest fears is losing so much weight and having my skin stretch out so badly that I will have all that hanging skin that is common with this weight loss.
     
    With the lap band, working out is a big key, and I know a lot of us are not used to it. I was not always this size - I was a size 12 for many years, and a fitness junkie. But as I gained weight, I lost the energy and the will to want to work out.
     
    So with the loss of 80 pounds, I got back the motivation to get back into fitness and health. In the past, I have joined gyms, but like most, I stopped going. Now, what I've done is come up with, and incorporate many exercises I can do from home and get the same results as if I were in the gym. In this economy, where things are so hard for so many of us, we try to save money where we can - but it does not mean I have to skimp on my health - hence I started my home exercise routine.

    Tropical cocktails are a rite of summer—delicious and refreshing. The problem is, the calories can push your diet over the edge. To counter this, I come up with some less-indulgent versions of classic seasonal favorites. Enjoy!
     
    Margarita
    It’s tempting to pick up a bottle of store-bought frozen margarita mix, but that’s where most of the 325 calories lie. Instead, just get tequila, limes for fresh-squeezed lime juice and some Triple Sec to make your own version. Calories saved: 153per 6 ounces.
     
    Mojito
    Sugar adds to the taste of this Cuban specialty, helping release the mint flavor. It also adds to the 145-calorie count. Instead, use a sugar substitute, like stevia, which contains virtually no calories, yet works to enhance the mint’s flavor during the muddling process. Calories saved: 80 per 6 ounces.
     
    Cosmopolitan
    This cranberry-flavored cocktail is pretty to look at, but full of empty calories. Lower the count of this 130-calorie drink by using diet cranberry juice. Then grab a bottle of Ty Ku Soju, an Asian spirit that is a great alternative to vodka and contains only 68 calories per 1.5 ounces. Calories saved: 65 per 4 ounces.
     
    Strawberry Daiquiri
    Don’t be fooled—just because it’s named after a fruit doesn’t mean this drink is healthy. Just like with margaritas, the pre-made mixes are packed with sugar, leaving you with a drink that can peak at 350 calories. Make your own with fresh strawberries (if they’re not sweet enough add more sweetness with a sugar substitute) and definitely skip the whipped cream topping. Calories saved 215 per 8 ounces.

    The queen of summer drinks, the piña colada can max out at over 650 calories! Substitute Coco López Cream of Coconut Lite for the coconut cream and coconut milk. Combine it with pineapple juice, sparkling water and a little rum, and you can satisfy both your sweet tooth and your diet. Calories saved: 475 per 8 ounces.

    It's that time of year again, Apple-picking season. If you are like me you will find you have too many apples on your hands after a weekend of apple-picking with your kids and family. Here is a nice recipe to use up some of the apples. Makes for a low calorie desert.
    Apples are loaded with fiber, the soluble kind that helps lower blood cholesterol.
    Maple syrup, cinnamon and just a bit of butter bathe baked apples in a luscious warm sauce. YUMMMM... ENJOY!!

    Date of Surgery: October 26, 2009 (my "re-birth day")
    Pre-op weight: 288
    Current weight: 208
    weight goal: 150
     
     
    Pre-op health issues:
    sleep apnea
    asthma
    high cholesterol
    joint pain
    difficulty walking, needed cane often
    shortness of breath
    had surgery on both knees due to torn cartilages from excessive weight
    back surgery was recommended
     
    I could not walk more than 1 1/2 blocks before I was out of breath, and experienced severe lower back pain that made me cry and stop in my tracks. My doctor was adamant that I had to have back surgery, saying it was not related to my weight. I needed numerous cortisone shots to relieve the pain. The back doctor told me I had to have back surgery if I wanted to be able to walk without pain - "I SAID NO". I wanted to see if the pain would subside if I lost some weight, AND IT DID!
     
    I no longer walk with a cane. I can walk many blocks without shortness of breath and WITHOUT PAIN.
     
    Dr. George Fielding of the NYU Program for Surgical Weight Loss and his staff saved my life. There are two other wonderful doctors at NYU, Christine J. Ren Fielding (his wife) and Marina Kurian. Although I was confident that any of these three doctors would do a good job, I chose Dr. Fielding for several reasons. First, he had the LAP-BAND® surgery himself, and I felt he would really know what I was going through, and that he would really understand my feelings. Second, he is an Aussie, and I love his accent (LOL) - I love to hear him talk, so I ask him a lot of silly questions just to hear him talk in that Australian accent.
     
     
    I have had five fills so far - I skipped one month because my band was still very tight, and I knew they would tell me I did not need a fill - and I would still have to pay the co-pay. I saved myself a $40.00 co-pay (lol).
     
    I am going in for my 6th filling today, May 13, 2010.
     
    The only thing I hate about their office is that their scale always shows me three pounds heavier than my home scale! So I always ask if I can bring in my scale with me but after laughing at me, they tell me I can't do it (Grrrrr).
     
    I was told by Gaspar, one of the Nurse-Practitioners, that I should write an article for their newsletter about the type of exercising I do to help with the weight loss. I do lots of home exercising by using things commonly found at home, such as lifting weights (liquid laundry detergent), etc! I am thinking about doing that, but I also thought about starting this blog to have a shared support system.

    2. types of exercises

    4. ability to share your thoughts and feelings

    Summer temperatures mean moving everything outdoors, including your eats! Picnicking is one of the best parts of the season, and it’s a great way to involve the whole family while basking in nature’s beauty. There are three key factors to packing the perfect picnic: each dish should be able to be made ahead of time, not spoil quickly and be transported easily. Steer clear of heavy toppings, sticky sauces and mayo-based recipes—they’ll create a mess and attract insects; the latter can even pose a health risk. Instead, choose items that are easy to eat with your hands (or just with a fork—no knives allowed!) and will be safe to nibble on after an hour or two has passed (assuming you don’t leave the dishes out in the glaring sun—which is never a good idea, regardless of ingredients).
     
    My creative picnic recipes will have everyone at the table asking for more without guilt.

    More-for-Your-Money Meal
    These days, who can't use a little extra "help" in the kitchen? Eating on a budget is easy—and tasty. This recipe makes 4 servings for under $15.00.
    Less is more flavor! This simple yet flavorful black bean soup draws upon Italian and southwestern influences. I love this soup a regular at our house. When serving to kids I use less crushed red pepper to make it slightly less spicy. The soup "magically" turns slightly pink if you add fresh lemon to your bowl of soup. My husband calls this dish "Meal for a Deal Black Bean Soup" So that's what I named it.
    It's so hearty and yet low in calories! Definitely a great soup. ENJOY!!

    Grandma's all American Homemade Apple Pie!!
     
    What a yummy pie, and so very easy! I remember going to grandma's house and smelling the aroma of a apple pie baking, I could not wait until it was done. I would eat myself sick by wanting more and more. I've made this many times and it all ways come out perfect. What a yummy pie, and so very easy! If I could give this pie 10 stars I would.. It's by far the best apple pie you will have ever make! Usually the first piece is a mess and then the juices run all over the pie pan. Not with this pie! And everyone will loved it!!
     
    Thanksgiving apple pie is a tradition in my house. The smell of baking apples with cinnamon and nutmeg fills the house, making every one's mouth water. Try this for your holiday table, your friends and family will love you even more. I have been using grandma's recipe for the past 25 years.

    Who would believe you can make a hearty shepherd’s pie without meat and gravy?
    I have made this dish a few times. I added in a meat substitute and they had no idea! They all LOVED this dish! It was delicious and easy to make! It is now a family favorite!
    This recipe reheats beautifully in the microwave.
    Try the substitution of veggie burgers and 1 cup of veggies, it "Beefs" it up. ENJOY!!
