    Baba ganoush, a Middle Eastern spread and dip is similar to hummus, but is made with eggplant instead of chickpeas (garbanzo beans). So if you are looking for a low calories spread and dip or even a snack this is it, and so tasty too! ENJOY!

    Fish baked in a delightful lemony vegetable mixture. I have made this recipe several times on several occasions. This dish will make for a nice light lunch. Easy too! I served it with a brown rice!
    I also used thinly sliced lemon on top of the fish while baking. Very moist and tasty too. It came out supremo!! Yummy!! ENJOY!!

    Barbecued turkey legs and thighs. I grew up with plenty of meals made with turkey legs because they feed a lot, and they're an inexpensive source of protein. But no matter what time of year we're having turkey legs, as much as I love turkey, the taste always reminds me of Thanksgiving. In this preparation however, slowly cooked on a grill, and basted with a tangy, strong, sweet, sour yellow mustard-based barbecue sauce, the turkey doesn't taste anything like Thanksgiving turkey. It just absorbs the smokiness from the grill and the tang from the sauce. Outside of the holiday bird, this is hands down the best turkey I've ever had.

    I make these broths for many of my dishes or just to have when I am in a broth mood. They are teasty and delicious and so full of flavor too. And for those of you who can not eat solids yet this is for you... ENJOY!
     
    Beef Broth:
    Ingredients:
    2 tablespoons vegetable oil
    2 pounds beef shank cross-cuts or soup bones
    5 cups cold water
    1 1/4 teaspoon salt
    1/4 teaspoon dried thyme leaves
    1 medium carrot -- cut up
    1 medium stalk celery with leaves -- cut up
    1 small onion -- cut up
    5 peppercorns
    3 whole cloves
    3 sprigs parsley
    1 dried bay leaf
     
    Directions:
     
    Heat the oil in a skillet over medium heat. Cook beef in oil until brown on both sides. Mix remaining ingredients in crockpot. Add beef. Cover and cook on low heat for 8 to 10 hours. Remove beef from broth.
    Cool beef about 10 minutes until cool enough to handle. Strain both through cheesecloth-lined sieve; discard vegetables and seasonings. Remove beef from bones. Cut beef into 1/2-inch pieces. Skim fat from broth.
     
    Chicken Broth:
    Ingredients:
    1 whole chicken (3 to 4 lbs. cut up)
    OR
    2 chickens, bony parts only
    2 teaspoons salt
    1 small bay leaf
    1/2 cup celery chopped up fine
    1 small carrot diced
    1 small onion diced
    6 cups water
     
    Directions:
    Place chicken in pressure cooker. Add all remaining ingredients and cover cooker. Cook at high pressure for 15 minutes.
    Remove from heat and allow to sit for 20 minutes. Remove cover, strain chicken broth. Freeze or use immediately.

    This is a healthier version of a traditional cobbler, with canola oil in place of some of the butter and whole-wheat flour instead of all-purpose flour. Unlike more classic biscuit-topped cobblers, the peaches and blueberries are nestled into a tender batter that swells around the fruit as it bakes. Other fruits may be substituted. It's especially beautiful when baked in and served right from a cast-iron skillet. Just made it yesterday for some company and it was a hit. It's really good and guilt free! ENJOY!!

    This recipe is a great source of protein and potassium.
    I can also order this breakfast sandwich when am out with friends or family in a restaurant, it's a favorite of mine to make at home.
    Smoked salmon and egg whites on a toasted whole-wheat English muffin is the perfect power breakfast. For a more substantial meal, pair it with a piece of fruit or a glass of 100% juice. Weight Watchers English muffins are smaller than regular muffins which makes the sandwich... ENJOY!
