    Excellent stir fry, quick and easy, the family will loved it!!!
    If you do not have the stir fry sauce you can use low sodium soy sauce instead. It still come out great. Really aawesome and very moist.

    Oh my! I can't tell you how much I have missed posting on this site and doing my recipe of the day!
     
    Hope everyone had a wonderful Thanksgiving holiday, and that the family & friends did not drive you nuts. LOL.
     
    I haven't posted here in quite a while, so I'd like to give you an update of what's going on with me.
     
    I made the holiday dinner for everyone and it was a huge success! We had 25 people over and I made so much food! Despite having tons of great food around, I'm proud to say I ate so little of it that I actually lost weight - I was so worried that I would gain some.
     
    I have lost a total of 121 pounds since having the lap-band put in fourteen months ago. I must tell you, I feel SO good (and I look pretty good too!). I had not seen some of my family and friends for quite some time - and they and they were all amazed at the huge difference in me.
     
    So now everyone is around the table, and they are toasting me for the wonderful dinner and for inviting everyone over - I then get up and walk briskly to the other side of the room to get my glass. Well, I don't know how, but I slipped on the marble floor in the kitchen, and I hit the ground. At first, I was stunned and shocked, and I had to lay there for a second. I hurt my knee and hip - not too bad though - just enough to feel it the next morning. So, in the middle of their toast, I now look up from the floor and I can see all my guests holding their glasses up with eyes and mouths wide open - they were as stunned as I was. My daughter was in the bedroom and she heard a thud - she looked down the hall and all she could see my feet! I must have looked like the Wicked Witch of the East after Dorothy had dropped her house on her! LOL.
     
    So my husband, daughter and a few friends ran over to help me up. Well, they did help me to my feet, but it was not hard for them to pick me up. I know that it would have been a disaster if the same thing happened to me before the weight - loss. I would have been hurt a lot worse for sure - and It would have been mortifying to need a whole lot of people struggling to lift me up off the floor. This was just another unexpected benefit of my weight loss! By the way, I'm sure I would never had the strength and stamina to put this dinner together when I was 288 pounds.
     
    So, all-in-all my Thanksgiving Dinner and day was a huge success.

    Still struggling with pacing my food intake. I find myself quite often making several mistakes. I sometimes I forget to pay attention to the lab band eating rules, and this always ends up causing me distress. I sometimes eat to much, or too fast, not waiting 60 seconds between each bite, or failing to chew my food 30 - 40 times before swallowing.
    Sometimes I do not wait 30 - 60 minutes after eating before I drink liquids. When I do not follow these rules, I end up in distress - I feel tightness in my chest, I start belching and sometimes I have to throw up.
    I am lucky - my husband and family are my biggest supporters. I must say my husband is a gem - he has made a point of knowing the rules, and tries to diplomatically (LOL) let me know when I am eating too fast or breaking any of the other rules. When he brings this to my attention, It helps me pay attention to what I should be doing.
    I went out yesterday to a family event, where there was tons of food. I began nibbling on the appetizers, and I got excited about the fact I was able to eat, and that is when I should have stopped. But I did not stop eating, and that's when I began to experience that tightness in the chest, and I ended up running to the ladies room to throw up.
    So, although I have been doing very well for the past seven months since the surgery (I have lost 80 pounds so far), it has been a challenge for me to change the eating habits of a lifetime. They say it takes about a year to develop the new eating habits, and I am continuing to work on this very important aspect.
    So let's all work on remembering to follow the LAP-BAND rules!

    I made this for a pot luck party this weekend. All my friends gobbled it up and asked for the recipe! Instead of using chicken, I used turkey sausage. You can use both chicken and sausage if you like. I also doubled the Cayenne pepper and the tabasco sauce depends on your family's taste. So easy to make and easy to throw together... PERFECTO! ENJOY!

    I was just sitting here this morning thinking about my whole weight loss journey and I so remember my first appointment with the doctor, when he told me I had to wait six months before having the surgery. I cried like a baby with the nutritionist, and I remember her remarking - omg, did I say something wrong?
     
    I looked up at her with my sad eyes, weeping, and I said no. What happened was a few things - first, I wanted the surgery so badly and thinking six months seemed so long down the road. The second was knowing how much weight I had to loose - that huge number seemed overwhelming to me - I wanted to loose 138 pounds. Third, I was so excited knowing that my 6 month journey has begun.
     
    So she gave me a box of tissues, we hugged and she said it is going to be ok - 6 months will fly by before you know it. I have to say it did - I was at my last nutritionist's appointment, and she said - wow, your surgery is in a few weeks - and I cried again - by this time she was used to me crying, so she knew it was not her LOL!
     
    This morning I was thinking about, wow, me! - I lost 96 pounds. What I had decided to do was not look at the 138 pounds total to loose, but to take it in increments of 10 pounds each - and that made it easier to deal with. Before I knew it, those ten-pound increments began to add up - 30, 50, 70, 90! 4 more pounds, soon to be 100! And that was how I was able to deal with that number of 138 pounds to loose.

    Dessert,Dessert,Dessert Anyone It's Guilt Free!
     
    I love apple pie, deep dish apple pie, Dutch Apple pie and apple sauce, but none of the store bought items that fit in my diet. So, I made a combination of all of them only without the sugar, starch or fat. I love my apples this way and have already shared the recipe with many friends. I can add the apple mixture on top of Eggo Waffles or Mini Delights and fat free cream cheese if desired, My favorite Sunday Brunch. Servings Per Recipe 2. To make more then 2 double the recipe Ingredients, you can eat 2- servings for only 187 calories Guilt Free how Incredible is that? Awesome dessert and so easy to make!!! ENJOY!!!

    What a difference a year makes.
     
    I'm able to get into that great holiday dress or that great outfit. I'm now that skinny girl in the room that I used to feel envious of. I used to be a size 10-12. I'm back to that size now - almost a size 10, smaller then a 12 but not quit a 10 yet. In the immortal words of Jackie Gleason - How sweet it is!
     
    I am 5'11" and used to weigh 288 pounds. I dropped 121 pounds, and my doctor now calls me "skinny". I went from morbidly obese to obese, to normal, and I'm now being called skinny. How sweet it is!
     
    I thank god and my doctor every day for my band. I am the happiest I have been in so many years. My depression about my weight, and many many medical problems, went away too. How sweet it is!
     
    Last year this time I was 2 months into my lap-band and lost a little more then 25 pounds. I would not go to any of the holiday parties I was invited to, I would not dare to go, still so ashamed of my body and my looks.
     
    Holiday time and feeling good!

    Leg of Lamb is a wonderful meat when it's tender and not over cooked. This recipe is my mother's. I memory eating this delicious roast as a child. You can server it with potatoes and vegetables. This is a great all year round dish. ENJOY!
