chicken AND STUFFING Makes 16 servings Prep Time: 35 minutes Cooking Time: 4½ - 5 hours Ideal slow cooker size: 6 quarts INGREDIENTS 2½ tsp salt-free chicken bouillon powder 2½ cups Water ¼ cup canola oil ½ cup chopped onions ½ cup chopped celery 4oz can mushrooms, stems and pieces drained ¼ cup dried parsley flakes 1½ tsp rubbed sage 1 tsp poultry seasoning ½ tsp salt ½ tsp pepper 12 cups day-old bread cubes (½-inch pieces) 2 eggs 10¾ oz can 98% fat-free reduced-sodium cream of chicken Soup 5 cups cubed cooked chicken INSTRUCTIONS 1. Combine all ingredients except bread, eggs, soup, and chicken in saucepan. Simmer for 10 minutes. 2. Place bread cubes in large bowl. 3. Combine eggs and soup. Stir into broth mixture until smooth. Pour over bread and toss well. 4. Layer half of stuffing and then half of chicken into very large slow cooker (or two medium-sized cookers). Repeat layers. 5. Cover. chicken AND VEGETABLES Makes 6 servings Prep Time: 20 minutes Cooking Time: 3½ - 8½ hours Ideal slow cooker size: 4 or 5 quart INGREDIENTS 3 lb chicken, cut up, skin and visible fat removed salt to taste pepper to taste 1 bay leaf 2 tsp lemon juice ¼ cup diced onions ¼ cup diced celery 1 lb frozen mixed vegetables including corn INSTRUCTIONS 1. Sprinkle salt and pepper over chicken and place chicken in slow cooker. Add bay leaf and lemon juice. 2. Cover. Cook on low 6 - 8 hours, or high 3 - 5 hours. I assume it is a green bell pepper or possibly a roasted poblano pepper for the Tex-Mex flavor) 1 - 4oz can of diced green chiles (jalapenos) 1 - tsp garlic powder ½ tsp pepper INSTRUCTIONS 1. Combine all ingredients except chiles and seasonings in large slow cooker. 2. Cover. Cook on low for 4 - 4½ hours, or until rice is tender and chicken is cooked. 3. Let's star with Lemon Garlic Chicken. LEMON GARLIC CHICKEN Makes 6 servings Prep Time: 25 minutes Cooking Time: 2½ - 5½ hours Ideal slow cooker size: 4 quart INGREDIENTS 1 tsp dried oregano ½ tsp seasoned salt ¼ tsp pepper 6 (5oz each) chicken=breast halves, skinned and rinsed 2 tsp, canola oil ¼ cup Water 3 tbsp lemon juice 2 garlic cloves, minced 1 tsp chicken bouillon granules 1 tbsp minced fresh parsley INSTRUCTIONS 1. Combine oregano, salt, and pepper. Rub all of the mixture into the chicken. Brown the chicken in canola oil in a skillet. Transfer to the slow cooker. 2. Place water, lemon juice, garlic, and bouillon cubes in the skillet. Bring to a boil, loosening browned bits from the skillet. Pour over chicken. 3. Cover. Cook on high 2 - 2½ hours, or low 4-5 hours 4. Add parsley and baste chicken. Cover. Cook on high 15-30 minutes, until chicken is tender. DAD'S SPICY CHICKEN CURRY Makes 8 servings Prep Time: 25 minutes Cooking Time: 6-8 hours Ideal Slow Cooker Size: 4 or 5 quart INGREDIENTS 4lbs chicken pieces with bones, trimmed of skin and fat Water 2 medium onions, diced 10-oz. pkg frozen chopped spinach, thawed and squeezed dry 1 cup plain low-fat yogurt 2-3 diced red potatoes 1 tsp salt 1 tsp garlic powder 1 tsp ground ginger 1 tsp cumin 1 tsp ground coriander 1 tsp pepper 1 tsp ground cloves 1 tsp ground cardamom 1 tsp ground cinnamon 1 tsp red pepper flakes 1/2 tsp chili powder 3 tsp turmeric INSTRUCTIONS 1. Place chicken in large slow cooker. Cover with water 2. Cover. Cook on high 2 hours or until tender. 3. Drain chicken. Remove from slow cooker. Cool briefly and cut/shred into small pieces. Return to slow cooker. 4. Add remaining ingredients 5. Cover. Cook on low 4-6 hours or until potatoes are tender. Note: Serve on rice. Accompany with fresh mango slices or mango chutney. Variation: Substitute 5 tsp curry powder for the garlic, ginger, cumin, coriander, and pepper. This was my first week post-op and I slipped up a bit. I have been feeling pretty well so I thought I'd push it a bit and I paid the price. I had 2 spoonfuls of refried Beans because they are really soft, and that was a huge mistake. It's so hard for me to be around people eating without wanting a taste. I had a sip of fruit juice too and one of milk. I've been feeling pretty guilty about those things so today I'm trying to make up for my sins this week through exercise. I hope I'm not pushing too hard. I did 2 miles (35 minutes) on the treadmill at 3.5 elevation and 3.5 mph and 20 minutes on the elliptical. I feel like I sweat a gallon. My towel was so wet you could ring it out and my shirt was too. I walked 2 miles a couple of days ago and it felt pretty good so I wanted to push it. Like the food thing, I don't want to do too much too soon, but I am eager to move forward.

Right after I had the surgery on Monday I started walking around the hospital doing laps with a couple of sleeve buddies I had made. We went through the whole process together. I knew I had to walk to help with the gas, but since I got home I haven't really been doing the walking and the pain from gas was almost unbearable so yesterday I walked around the block, and tonight I added light exercise to my weight-loss. I did some brisk walking for 2 miles and I have to tell you, it felt like a lot more than 2 miles. I'm sure I'll improve the more times I do it. I know I have to take it easy for at least a month, but the walking really helps and I know I won't get to where I need to be with only the surgery. The surgery was only a part of it. I'm doing good. Had surgery on Monday and was released on Tuesday. Been keeping everything down fine. I haven't vomited even once. But I do get really bad pain in my chest just below the diaphragm if I try to sip water too quickly. I'm glad we're both hanging in there.

I am also on day 3 post-op and I agree with you on the difficulty of drinking and I am scared of drinking too quickly because it hurts and I dont want to stretch out my new and smaller stomach. The pain on the incisions is gone except for the big one on my left side. It took me an hour or so to finish an 11oz protein drink. I'd normally do that in one sip

I also got approved immediately. That was good news and bad news. The good news is no waiting. The bad news is no time for a food funeral! Congrats!!!

Things I didn't expect my first month post-op

Thanks. I was told if I drink caffeine I have to drink more Water, and I didn't anticipate swallowing water would ever be this difficult. I'm used to downing a liter of water in a minute or so without really even trying. Now I take the smallest sip possible and immediately start feeling pain. I never thought I would be looking forward to flatulence because farts make me feel better and I really never thought my wife would want me to pass gas. -
I can't describe the pain in and around my chest every time I take a sip of anything. I've been doing my walking, using my incentive spirometer and taking gas-x but no love. Every once in a while I'll pass gas out of the attic or the basement and feel some relief (the basement gives more relief), but not enough. My left hand is in a huge amount of pain on the back of the hand near the wrist. I think I twisted it and rolled over it last night. It's getting late, so I'm going to walk a lap around the block and hope that helps jiggle loose some gas and then it's off to bed.

One day post op and in so much pain

Mine was on the 21st and the gas pain is killing me. I can't swallow the smallest sip without getting chest pains from the gas. I've taken the gas-x strips and I've walked and walked around the block but it doesn't help me to pass any gas. I've been ok with the nausea because I still have that patch behind my ear and they gave me pills that dissolve under your tongue and capsules you break open and put into water to stop the nausea. It's really hard for me to drink enough water, and I haven't had any Protein shakes or anything. On a side note, I haven't taken my meds for days and my sugar is lower than ever which could be from not eating or drinking. My blood pressure is perfect and hopefully this means I'll be off all meds soon. I'm up a few pounds since surgery but I think it could be the saline they shot into my body that has to go away. On the few occasions I could pass any gas, the relief was awesome. I feel like I need a few big ones and I'll be right as rain. I'm sore as hell. I haven't had an food since the surgery 2 days ago, and I can barely swallow a mouth full of water and when I do, I get chest pains from all of the gas. Luckily I walked enough to day that I was able to fart a few times and that really helped. I thought I might have broken my hand last night. I can't even make a tight fist. My doctor says it's a sprain because I wouldn't be able to wiggle my fingers if it were broken, so that's good news. I think I rolled over on it and twisted it somehow, but the back of my hand near my wrist hurts like a son of a bitch. I'm trying to stick to the program but it's not easy. The liquid Vicodin they gave me is ok, but it doesn't hold a candle to the dilauded pain killer they gave me at the hospital. That had me feeling just fine in under a minute. My incision spots don't really hurt other than the big one on the left. I have to wear these support stockings to prevent blood clots. I took them off before but I'll have to put them back on because walking around was much easier with them on. I normally don't wear stockings until Saturday night and the hospital said they don't have any fishnet support hose so I guess I'm going to have to wait a bit. -
I'm still very sore. I sleep on my side and last night I rolled over onto my stomach and that woke me right up. One of my incision spots is really hurting more than the others. I'm having trouble swallowing anything without it giving me a lot of pain. The tiniest sip of water or protein drink hurts me really badly. I think it's because of the gas. I need to get up and walk some more. I'm going to my primary care doctor in a few to talk to him about it.

I'm in the hospital about to do surgery!

Well, the day has finally arrived. I am a bit nervous about everything, but I'm moving ahead. It's funny, I've had 2 surgeries before and I wasn't nervous at all, but this one is a much bigger deal. It will literally change every aspect of my life forever. My wife is excited and happy I'm doing it, and I'm excited by the possibility of being healthier and living longer for my daughter. Anyone have advice that can get me past the jitters?
