Protein yogurt is awesome. I make it all the time You can make it in a instantpot and using probiotic pills and regular milk. You can then strain it (using a cheesecloth if you want to do this more thoroughly)-straining it drains off carbohydrate and concentrates the protein.

Timing is indeed very important when it comes to vitamins. I suggest keeping a journal and recording your experience with different schedules of vitamin intake to figure out what you tolerate best! (This was helpful for me)

The glycemic index of bread actually lowers both when you freeze it and when you toast it so I find getting a good seeded/sprouted bread like Ezekiel, freezing then toasting to be the way to go
