  1. Okay, this is so easy. Saute a small onion (chopped) with about a tbsp of minced garlic in a tbsp of Oil. Add some fresh chopped cilantro (you have to have fresh). I probably use 1/4 of a cup. Add a can of Rotel Tomatoes (tomatoes and green chilies) I use original. Let simmer for a few minutes. Add 2 Cans of Black beans (drained and rinsed). Then add however much chicken broth you want (to make it thinner). Maybe 2 cups or so. Simmer for a few minutes - low fat, easy to blend and taste just like the Barracho Beans from the resturant.

     

    You can also add some Cumin or other seasonings - I haven't been able to tell a difference with the seasonings. The important thing is the Rotel and Cilantro. I love this stuff.
