    Last night’s dinner was from a local Mexican place. I got mixed fajitas. The before and after is misleading as one kid ate about 1/3 of my beans and another had a pretty stuffed fajita. I ended up throwing away the other tortilla. Also, I hardly ever drink and managed maybe 4oz of a frozen margarita. 😂🙃 Although I did end up eating 2 pieces of sopapilla and 2.5 churros.

    I was too lazy to slice brisket for bulgogi so I used ground beef instead. Even my picky eater loves it so I consider it a win.

    Y’all my new foods to try came in! 😍 The gondre (the one on the right) has a whopping 20% of daily calcium and iron needs in a 14g serving. These are definitely for cooking on my days off because most of the recipes I’ve seen require a 24hr soak and then another 30 minutes of boiling after.

    The closest connection I have is a father who was stationed in South Korea in the 80’s. He did bring home a love of kimchi though. I get loads of strange looks when I walk into Asian or Hispanic grocery stores which I find hilarious. When I was about 4-5 months post VSG I was able to eat a few pieces of sushi but that was pretty much my extent then. After my revision I think it was about month 4. It wasn’t ever very much at first maybe a couple of tablespoons. I’ve since learned that rice is a slider food for me so I try to limit it to a half cup or less but I know it’s different for everyone.

    I’m 2.5 years from VSG and 19 months out from VSG to RNY revision from hernia and GERD. I can’t eat a whole bunch about 1/3-1/2 cup at a time as I find it more filling than actual rice.

    Since I had been up for 4hrs I was finally ready for breakfast! Today’s was bibimbap with the remaining tteokbokki in place of an egg, also, bulgogi, cucumber salad, daikon radish salad, and the first tastings of the daikon radish kimchi (definitely needs more time to ferment!). I’ll be finishing the rest later because it’s leftover worthy. Weirdly since surgery leftovers haven’t appealed to me.

    I keep telling myself “I’ll post that later” and then never do but I take the pictures. 🤦‍♀️ Anyway, my stomach has been on a “let’s eat Asian” kick the past couple weeks so I’ve been making mostly Korean food. Hot and sour soup (Chinese) bulgogi (Korean marinated beef) tteokbokki (SPICY Korean rice cakes, I bought these because I can also, they’re a lot of work in a home kitchen) 😂 kani (Japanese cucumber and imitation crab/surimi salad) that I’ve made twice because a teenager ate most of the first batch without me! oi muchim (Korean cucumber salad) Musaengchae (Korean daikon radish salad) Chadol doenjang jjigae (Korean- it’s a beef stew of sorts-light on the beef and has zucchini, potatoes, and tofu) I’ve also made some daikon kimchi but it’s not fermented enough yet to eat 😩, some pickled red onions, simmering roasted beef marrow for bone broth, and last night made roasted Cornish hen with potatoes, carrots, and onions that my youngest refused to eat because the “chicken” wasn’t breaded. 🤦‍♀️

    I’ve been on a salad and smoothie kick lately. When I went to the store hungry yesterday I bought like a dozen premade salads and the stuff to make more. 🤷‍♀️ Today’s smoothie- spinach, kale, strawberries, almond milk and protein powder. Then there’s chicken caeser salad, my fruit and veggies box, a cheese stick, 2 protein drinks, a mushroom and havarti cheese omelette, a granola bar, 2 wasa crisps, peanut butter, and a sugar free energy drink. This one is from Saturday- pineapple, kale smoothie with protein powder, Caesar salad, fake chicken and onion stir fry, pork fried rice, hot and sour soup, seaweed snacks, 2 protein drinks, wasa crackers, peanut butter, and a granola bar.

    Post Valentine’s Day picture dump of the goodies I brought into work. I also made Reese’s stuffed peanut butter brookies and lemon poppyseed pound cake that I didn’t get a picture of. -cheesecake brownies, “mint to be” cookies, snickerdoodles, Valentine’s Day white chocolate fudge, salted caramel fudge, and hot chocolate fudge. I’m a fan of trying new meats. Camel, bison, deer, duck, lamb, cow tongue, and rabbit are all things I’ll definitely eat again. I’ll have to redo the emu though because I think it might’ve been the way it was cooked. And if I ever want to try alligator I only have to drive south.

    That’s where I got the idea from but I definitely wanted corned beef hash so it replaced the other meat options and surprisingly scrambled eggs goes great with crispy tortilla chips.

    Now onto the various workdays (I pack all my day’s calories for workdays) I’ve packed and didn’t post. Various items included in different meals included- barbecue jackfruit, drunken red cabbage (red cabbage braised in butter, shallot, red wine, orange juice with dried cranberries and raisins), some chipotle baked beans, broccoli slaw, pickled radishes, creamy cucumber salad, a mock mushroom and spinach risotto (made with minute rice), a red lentil curry, and who knows what else.

    Long time no post. I mean to…. But I always forget. Let’s start with tonight’s dinner and work backwards from there- This lovely roasted corned beef melt with sautéed garlic spring mix, Gouda, havarti, and Dijon mustard on sourdough. Tracking is for the whole sandwich I clearly didn’t eat because I made the mistake of having it eyes bigger than my stomach and eating the cooler melted cheese that I know doesn’t sit well. (I can still feel it in my chest almost an hour later).

    @Arabesquecould you do dry beans over tinned and prepare them yourself? I would send you oats and beans in the post if it wasn’t for customs and food rules.

    Weight loss, dating and confidence

    So mine is a little different- I met the guy I’m talking to about 3yrs ago when I was 330lbs at 5’7” (170cm). I didn’t see him much from nov. 2019 (VSG dec 2019 and RNY revision for gerd aug 2020) to Sept. 2021 (155lbs) (I was either on medical leave or working a bunch because of Covid). Anyway, I was super nervous about being seen naked or intimacy related things because of skin and scars (I have a midline scar from sternum to pubic bone). He told me that it’s not the outside that he cares about it’s what’s on the inside because the outside doesn’t always stay the same. And while I’m still super self conscious about the loose skin and scars he makes feel okay with just being myself around him.

    Not sure how medications are set up in the UK- like can you get acetaminophen from the grocery or does it all go through the pharmacy? If you can get it at the grocery buy the children’s liquid kind if they don’t have adult. Tylenol (a major acetaminophen producer in the US) says the dosing for adults is 20mL every 4hrs as needed but check with the manufacturer of the acetaminophen you purchase.

    Just some random foods from between the 26th and my birthday (today)- Some weird creamed spinach and (fake) chicken dish, broccoli slaw (with cranberries and walnuts), bbq pork, hard boiled egg, a turmeric (fake) chicken and spaghetti squash soup, a vegetarian taco bake with vegetarian beef crumbles and vegan cheese and sour cream, and a Christmas sprinkle and chocolate chip cake (kids liked it… I though I would but would rather have more tea or coffee instead.) There is loads I forgot to take pictures of but 🤷‍♀️

    From yesterday- I made Nutella and strawberry jam stuffed baked donuts. I had half of a Nutella one. They were kind of on the bready side so I’ll have to adjust the recipe before I make them again. Christmas dinner was a beef roast with mushroom gravy a mini croissant, and spaghetti squash with marinara for me. No picture of the kids food but they also had green beans with Italian dressing, mashed potatoes, mini croissants and spinach cheese tortellini with marinara for theirs.

    Hot sauce, garlic or onion powder, chili powder, sriracha, Italian seasoning, puréed onion and dill pickles (makes it a great dip), and even puréed kimchi. A lot of the options I have are spicy so if you don’t do well with that it might be tough. The soft foods phase was my chance to try all the herbs and spices I had in new ways.

    Made a salad for dinner as I’ve been craving veggies and carbs the last week. Roasted bok choy and parsnip with bulgogi seasoning and avocado oil with pan fried veg’n chicken, romaine, hard boiled egg, and Italian dressing. calories was for the whole thing that I clearly didn’t eat.

    Covid Post Op and Weight Loss Stalled

    I’m 16 months post revision for GERD and 2years out from VSG. First symptoms 9 days ago, tested positive on the 20th. Even while moving less and eating more calories I’ve managed to somehow lose weight. Symptoms include- extreme fatigue, sinus congestion, migraine, dry cough, diarrhea, and some body aches. Edited to add- you’re right on track for a stall as well being almost 6months out. That might be part of it along with the inflammation that Covid causes.

    Someone brought home the Rona so most of my meals the past week have been easy or super easy (hence the salad yesterday) or I haven’t eaten much at all because I’m exhausted! Today was no different- chipotle pinto beans and wheat toast. 240 calories total… and then another 140 for 8oz of nog (not overly sweet and I think it said less than 15g carbs per serving).

    Had salad for dinner with the sole intent to make edible Christmas trees (chocolate mousse stuffed sugar cones covered in frosting and candies) with the kids for dessert. Ended up eating the entire salad that I added a hard boiled egg to but half a tree was too much for me. Yes, I picked out all orange mini M&Ms and all yellow sweet tart balls.

    I knew better than to eat just leftover chicken tenders and French fries for dinner after only having a protein shake, a protein bar, and a cream cheese cookie the rest of the day. 🤦‍♀️ Calories is total for the day so far. I have to work tomorrow night so I’m trying to stay up as late as possible so I sleep during the day. Hopefully I’ll be able to eat something else.
