    Food Before and After Photos

I decided to have a mini splurge dinner last night. (I consider over 450 calories, or high carb a splurge) I bought Molinaro pizza kits from Costco. 220 calories for 1/4 crust and sauce. I added 1.5 oz of mozzarella 3 slices of pepperoni and 1/3 of an *Italian sausage. I sat down, took a bite and got confused , it was weird and gross. I accidentally put bratwurst on my pizza! I DO NOT recommend this combo! I took it off, saved 90 calories and learned a lesson.

Write down everything you eat, find healthier alternatives to things you enjoy. I eat a lot of tacos that are super filling and low calorie. I love “nice” cream and I make homemade pizza to stay sane. I also keep very busy. I’m very consistent and have kept this weight (123-126) for about a year. My 2 year anniversary is next month.

My husband asked me what was for dinner yesterday. I simply looked at him and said, “Why are you asking me?” He picked up the phone and ordered dinner. I’m SO sick of cooking.

    Weight gain.....

I have maintained my weight and it is work. I have to be very conscience of what I’m eating or I’ll gain. I track everything. I’m bored out of my skull half the time, my husband is working from home and youngest kid (21 yr old) are here 24/7. I love them dearly but I want them to leave (safely) like they used to! I won’t touch a gym with a 6 foot pole, mask or glove so I just keep busy and go on walks or bike rides. We have a lot more food stocked up than normal, we eat 90% of our meals here and it gets boring, repetitive and tough. I need new recipes! This is HARD mentally and physically, I understand 100% why someone would gain. I feel fortunate that this happened 16 months or so post surgery. I feel like I had time to develop good habits and coping skills (aka painting everything). I think everyone is doing their best in a really crummy situation.

I just make (*or buy pizza dough) real pizza crust and portion out 1.5 to 2 oz. Roll it out thin, you might be surprised how much you get. I add chicken Italian sausage, tomato sauce, veggies and 1 to 1.5 oz of mozzarella. Adds up to Less than 350 calories and is a very good. If I’m going to have pizza, I need pizza crust. ,

I can understand why you didn’t tell your teens. I did tell my 2 “kids” but they were 19 & 28 which is very different. Body issues at that age make a lasting impression. I told a total of 5 people, my husband, my 2 sons, 1 friend and my sister. I didn’t tell my stepsons or my brother, I don’t see them as often and I’m pretty private. I made a new easy “pie” last night that was super good. I don’t have any issues with breads or sugar, however I do watch how much I have. I baked wonton wrappers in a muffin tin 350 for about 8-10 minutes without filling. I stacked 2 in each tin for this dessert. I cut up apples and cooked them in water and lemon juice with about 1 tsp of sugar per apple and added cinnamon. I also sprinkled a little cinnamon and sugar on the wontons before I baked them. Just fill the wontons afterward with whatever you like. Sugar free pudding would be good too. My son scarfed a few down and I had one. Total of 75 calories, it probably was less but I always add calories when I’m eyeballing a recipe. Nice change of pace for when I get a sweet tooth.

Ok, I’ve seen that on Top Chef and Food Shows. I always thought they were saying tamale vs. tomalley. No wonder I found that term a bit confusing! I’m sure it’s wonderful but I get easily squicked out on guts, offal and any meat I’m unfamiliar with. I know it sounds weird but if I think about what I’m eating, I get grossed out. I can eat crab, shrimp etc... but I would pass on the tomalley. I don’t have the guts to try it! I can’t bring myself to even try lamb.

@MarvelGirl25 Your meals always look so awesome! @ms.sss What is crab fat? Tonight I had 2 of these: 2oz smoked pork loin with Frontera grill carnita marinade, a tablespoon of grilled corn, onions & peppers on a homemade corn tortilla. It took me about an hour to finish. It felt like so much food for about 400 calories.

    STOP MAKING EXCUSES

Damn it, I only have one. WHO in the world would want to date a “man” with that attitude? I hope he does some serious reflection and matures. He’s going to be lonely if he doesn’t make some major changes.

Corn tortilla dissertation: The thing is it’s really more about feel vs. a specific recipe. Humidity and other factors really change the amount of water. It’s simply Masa flour, water and salt. (Some recipes call for no salt, no thanks) I used Gold Mine brand organic white masa. There wasn’t a recipe for tortillas on the bag and googling didn’t help much. Most call for 2 cups masa 1.5 cups warm water. That was WAY too much, so I scaled back to 1 cup and added by tablespoon until I got the the consistency I was looking for. It should feel like Play dough, and shouldn’t stick to the palm of your hand. Also, patience is a key factor. Corn flour absorbs water slower than wheat flour so you have to knead it for awhile and let it rest a bit. I need to use a tortilla press, I failed miserably without one. Use a cut open ziploc freezer bag inside the press. Cook on hot cast iron skillet 45-60 seconds per side. My dough got sticky halfway through so I just kneaded in a little more masa and it worked. Rick Bayless has some great videos on YouTube that helped me a lot. Sorry this is so long, I have too much time on my hands and I’m excited I finally figured this out. It’s been a long journey of failures.

I’m so excited, I finally mastered making corn tortillas! They aren’t low in calories, so my next step is making small ones. They are delicious.

    Maintenance 1+ years post-sleeve

I’m almost 2 years out, my restriction is less, but it’s still there, I can eat more but I keep track of everything I eat and when I’m really hungry I make better choices. Due to my age, 59, I have to watch my calories very closely. I stay between 1350-1550 with an occasional outlier. I also use a Fitbit and stay active, if I wasn’t active I would have to stick to 1300 a day. My past 6 months have been very consistent.

I’m in a food rut so I just ordered a bunch of spices from Penzeys. I specifically logged on to order Curry, however to get free shipping I had to spend $39. After I checked out, I realized I bought everything but curry! Yay @sillykitty is back! I don’t post much but I check in and read at least every other day. Once I get my spices hopefully I’ll gave some interesting food to post! @ms.sss I want a drumstick now!

I need to find that Biscoff Shake. It would be amazing in coffee. I love(d) those cookies and cookie butter so much. I live really close to a GNC, I’ll call them tomorrow. I just looked it up and it says that flavor is California only?

I get sick of smoked meat. I do like chicken and pork loin smoked, but not everyday. Yes, they are long horn bull handles. My Canadian husband is pretending to be a Texan apparently! I cook steak when we use cast iron, Mr. CB grills and smokes. He is more of a carnivore than I am. Those burgers look fantastic. (Minus the cheese)

My husband spares no expense when it comes to meat. My Costco doesn’t have the fancy big bone ribeyes. I’m sure they would cut one if we asked. This Rec-Tec smoker is sitting on my patio. Oops , I’ll add that below.

I like the French bone on the Tomahawk steak! @ms.sss it looks better than ours! Where did you find one with such a dramatic bone? Our good butcher shop doesn’t have these in their case. I don’t think burnt ends are hard to find if you have a decent bbq place near you. Even though my husband has a huge smoker, he doesn’t make these. He tried once and they were ok, but not great. He does smoke Brisket, pork, fish, chicken etc.. but these he has not mastered.

They are burnt ends, basically super good brisket, it’s really rich so I had to throw in the napkin after 2.5 ounces. We bought a bunch, plus chicken and chicken wings. My thin 21 year old son mowed through more of it than I anticipated. He’s usually not a huge carnivore or a big eater. I planned on 3 meals, might end up being 2! I may have to cook on Father’s Day now dammit.

Everything looks so good! Tomorrow is going to be dangerous, I’m picking up a ton of bbq food for a father’s day feast this weekend. I swear I got enough for 8 people and there will be 3 of us. It will last all weekend. I ordered some smoked chicken so I can pace myself! I’ll post pictures this weekend. Damn, those chops look good! Did you marinate them? @ms.sss
