Increasing your calories and protein intake and beginning weight training will allow you to start defining your muscles. Muscle weighs more than fat, so keep that in mind. 800-1200 is the basal caloric intake, so i'd think you should offset your calories burned with calories eaten to maintain a 1,000 calorie balance (for example, you eat 1800 cal per day, burn 800 cal during exercise, and you're still at a balance of 1000 cal).
