I love enchiladas - and this might have been the best one I have ever eaten. Thinking about creating it and one combining chicken and a mole sauce inside the corn crepe (might even make a blue corn crepe) And I will cover them with diced avocado! I love mexican food - it is the one food group (yes - I consider it one) that I never have to be in the mood for. and per dad's request - just made chocolate covered strawberries

G4E - prayers for you guys. it's Sepsis - it can be very bad (as it sounds with what you have shared) - do they have him on a drug call Xigris (pronounced zigris) - some hospitals are not familiar with it - it is one of the premier treatments for sepsis besides identifying and treating the source of infection and pushing fluid. I can help with whatever questions you have. I am actually the chair for our hospital's sepsis committee. I am at your disposal.

Slim - in regards to freezing ragu affecting taste - Not at all - I always make big batches and freeze most of it. OK lu - one of the items at the brunch: a shrimp enchilada - the waiter kept trying to tell me they just use corn tortillas - but I call bluff (I don't think he was intentionally misleading - I just don't think he's a foodie) I could tell that instead of tortillas they had used a corn based crepe - so tender, hint of sweetness - unbelievably melt in your mouth. It was filled with chopped shrimp, spinach and a creamy spicy white 'queso' style sauce.

So what did you think of the bolognese? - Trust me try it over a slice of grilled parmesan polenta! :cool:
