Meat has been a struggle for me as well, especially chicken. Seafood is tolerable, thankfully. I didn't even attempt meat the first year; I'm about 7 years post-op ... and I still can't eat meat. I don't get ill from other proteins - only cooked meat. I've eaten Carpaccio without an issue, which is another reason why I think it's only cooked meats that are the problem. But how many UNcooked meats are there to choose from?! I also cannot eat rice or pasta, which is okay by me. And I shy away from ground meats (hamburger, sausages, etc.) because those foods tend to get stuck. However, I can eat jerky in small amounts.
Even after all these years, I still keep a bottle of meat tenderizer in my office, glove box, and purse ... just in case something gets "stuck" and I have to resort to using that to remove it. Luckily, I've learned enough that it doesn't happen as often anymore.
I recently read that Betaine Hydrochloride can be helpful, when taken with meals. I'm going to give that a try, as soon as I feel courageous enough
