    Hi guys - I'm one week post of as of tomorrow - had surgery last week in TJ with Dr. Ponce De Leon at Obesity Goodbye. I'm feeling great! Digesting well, only took 2 days off work, so far so good. :-) The only negatives I'm experiencing are food cravings and a tremendous amount of gas/grumbling noises - which I can deal with. Low Calorie/High Protein macaroni and cheese 2 cups uncooked macaroni 1 (12 oz.) container low-fat cottage cheese 1 (5 oz.) can evaporated skimmed milk 2 scoops unflavored whey Protein 1/2 cup Cheddar cheese, shredded 1/2 tsp. salt Freshly ground black pepper Cook and drain macaroni according to package directions. In blender process cottage cheese, Protein powder and milk until smooth. Place in small saucepan and, stirring constantly, heat over medium-low until smooth. Add Cheddar cheese, salt and pepper. Stir until cheese melts. Fold in macaroni. Serve immediately or place in covered casserole dish and bake 20 minutes at 350 degrees. Makes 8 - 1/2 cup servings w/ approximately 20 grams of protein per serving.
