Your body does not process Fiber in the same way that it does "other" carbs, so if your aim is to be low carb, just watch for your net carbs. That means total carbs minus fiber. Most Quest bars are 1-4g net carbs and perfect for low carbs diets. Fiber is good! If the total carb count is brought up by plenty of fiber, that's a good thing.
