    Independence Day Challenge

    nip, your arms can't be any worse than mine. I already told DH that I am having my arms done in addition to my TT. Hopefully I will lose the desire too! My problem is that I like sweets too much. Don't get wrong, it's a lot better than pre-band, but it could still be better. You have done a phenomenal job!

    Independence Day Challenge

    Leslie, good for you! I played tennis in high school (I probably about 135lbs) and I just told DH we need to start playing again. It is wonderful exercise. Any game that involves running back and forth in all different directions has got to be good! PS. I always whoop my hubby too, LOL!

    Here's my official menu for the day: B'fast~ Atkins strawberry shake Lunch~ 2 spinach turkey roll-ups, 1/2c raw diced Jicama Dinner~ 2 ground beef & spinach stuffed portabella caps Snack~ undecided (either a handful of nuts or atkins shake) I did go the gym today too! Very happy with today....back on track!

    Wii Fit

    Okay...I want one! I have a membership to the gym but I don't go near as much as I should. It's way across town and with gas being so high, I find myself not wanting to make the trip. It looks soooo fun! I mentioned getting one to DH today and he said he would look into it! I would probably still go the gym a couple of times a week and do the Wii Fit at night when I'm bored (since I'm such a night owl). I think I would like the sports games too. DH and I are pretty competetive with each other so I think it would be fun to kick his butt!

    Congrats Renewed! Good job!! I am back on track today and so far so good. So far I've had an Atkins strawberry shake, 2 spinach turkey roll ups, and 1/2c of diced Jicama. Not sure about dinner...thinking of making stuffed mushrooms

    What's the Scoop on Eggs???

    Eggs do not work for me! I could eat them fine when I was on mushies but not after I started getting fills. I've tried them several times and I come very close to PB'ing every time. I've found it's just easier to stay away from them.

    Independence Day Challenge

    I didn't do the best over the weekend either. We went to Johnny Carino's (Italian nachos ) Saturday night then to the Fun Park. I did work off some of my bad choices playing laser tag though. It was really fun! I am going to the Y today too. I'm sure I will stick to my usual...strength training and the elliptical. I'm still not really to wear a swimsuit in public, so the only swimming I'll be doing is at my sister's house, lol!

    January - Summer 2008 Challenge

    I didn't make it either, but I came pretty close. My goal was to weigh 237 and I weighed 244 this morning. Oh well, still proud of what I did lose!

    Diane, glad to hear from you. Glad to hear things aren't any worse and it seems like there's no rush, so that's good. Take the time and make the best decision for yourself. Good luck with the breast reduction too!

    Renewed, I had to laugh when you said you had a lemon slush from sonic. I've heard you rave about it, so a couple of weeks ago, I tried one and it was sooo good. Later that week, I tried a lemon cream slush and OMGosh....so good! That's all I get from there now! I didn't have the best weekend. We were gone pretty much all weekend and eating on the go. Even though I didn't do the best with my carbs, I have noticed I'm not craving sweets anymore....and that was my main goal (Sweets are the devil ). Anyway, starting back strong tomorrow. Everyone is doing great! Keep up the good work!

    Crust-less Spinach Quiche

    This is perfect for those who are trying to watch the carbs and it is soooo gooooood! INGREDIENTS 1 tablespoon vegetable oil 1 onion, chopped 1 (10 ounce) package frozen chopped spinach, thawed and drained 5 eggs, beaten 3 cups shredded Muenster cheese 1/4 teaspoon salt 1/8 teaspoon ground black pepper DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan. Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated. In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving. Instead of one large quiche, I pour the mixture into the bottoms of a greased muffin pan, a little less than half full. It makes bite sized portions that are perfect for a party. Easy and delicious. Oh, I use whatever shredded cheese is on sale at the store.

    mamato3, the sodium is probably making you retain water. As far as the constipation, I dunno. Atkins hasn't effected me that way yet. Hope it gets better!

    Not a good day today, but I'll post it anyway. B'fast~ Skipped Lunch~ 2 spinach & cheese turkey roll-ups, Fritos honey BBQ twist Snack~ 1 oz. mixed nuts Dinner~ 1/2 bowl of tortilla soup w/ a corn muffin, brownie :smile: I told you...not good, but I'll be better tomorrow:biggrin:

    I was down a pound today...YAY! Calories burned~ 2644 Calories consumed~ 1118 Deficit~ 1526 Not bad...just not as good as I wanted.
