    Faux Pizza Crust!

    It was phenomenal!! I felt like I was eating real pizza again! Mike hates cauliflower and he couldn't tell it wasn't real pizza! I used ham and pineapple as toppings.

    I made this tonight and it was really good!! Tasted just like regular pizza!! I was really happy that I could have something familiar again without feeling guilty. I made a ham and pineapple pizza. I will try to post a picture of my results tomorrow.

    Thank you SimplySammi! I will definitely have to check out this brand too! I like oatmeal, but could not find one with much protein. Maybe I can up the protein even more by making it with milk. Where did you find this brand? kmiller- I have found the better oats brand at Kroger and Walmart. Kroger seemed to have the most variety. I have not bought the oat fit variety yet though.

    I have not had this variety, but I have had the Better Oats brand and I must say, this was my favorite brand of oats before surgery! This is exciting to see that they have a NSA variety! Thanks for posting this!

  12. Maybe you could download a game to your kindle or laptop. I like the hidden object/mystery games, and I find that helps me stay distracted for a few hours because I involved in the game. You can find a lot of free game downloads on amazon or by googling.
  13. The first 6 weeks is so hard! I tried some grilled chicken nuggets early and seriously regretted it! Do you have a craft or hobby that you can do? I was off for a week between Christmas and New Years and I found that if I stayed busy doing something with my hands I wouldn't be so tempted to eat something I shouldn't. I tried out a knitting loom that I had gotten years ago for gift. My goodness, did I make a lot of hats, but it helped me stay distracted! Also, stay away from the food network!

    Zucchini Lasagna

    Yum! It is so good! I made it during the summer when I had a ton of Zucchini! I liked it better than the regular recipe! I made the recipe from skinnytaste.com Zucchini Lasagna Skinnytaste.com Servings: 8 • Serving Size: 1/8 • Old Points: 8 pts • Points+: 9 pts Calories: 345 • Fat: 17 g • Carbs: 16 g • Fiber: 2 g • Protein: 36 g • Sugar: 8 g Sodium: 801 (without salt) Ingredients: 1 lb 93% lean beef 3 cloves garlic 1/2 onion 1 tsp olive oil salt and pepper 28 oz can crushed tomatoes 2 tbsp chopped fresh basil 3 medium zucchini, sliced 1/8" thick 15 oz part-skim ricotta 16 oz part-skin mozzarella cheese, shredded (Sargento) 1/4 cup Parmigiano Reggiano 1 large egg Directions: In a medium sauce pan, brown meat and season with salt. When cooked drain in colander to remove any fat. Add olive oil to the pan and saute garlic and onions about 2 minutes. Return the meat to the pan, add tomatoes, basil, salt and pepper. Simmeron low for at least 30-40minutes, covered. Do not add extra Water, the sauce should be thick. Meanwhile, slice zucchini into 1/8" thick slices, add lightly salt and set aside or 10 minutes. Zucchini has a lot of water when cooked, salting it takes out a lot of moisture. After 10 minutes, blot excess moisture with a paper towel. On a gas grill or grill pan, grill zucchini on each side, until cooked, about 1-2 minutes per side. Place on paper towels to soak any excess moisture. Preheat oven to 350°. In a medium bowl mix ricotta cheese, parmesan cheese and egg. Stir well. In a 9x12 casserole spread some sauce on the bottom and layer the zucchini to cover. Then place some of the ricotta cheese mixture, then top with the mozzarella cheese and repeat the process until all your ingredients are used up. Top with sauce and mozzarella and cover with foil. Bake 45 minutes covered at 375°, then uncovered 15 minutes. Let stand about 5 - 10 minutes before serving.
  15. Hi, Ok, I know this is an awkward topic, but I have found something that has helped me and it may help others, hopefully, that have the same situation of not being able to go very often. I discovered this by accident, but it has helped me everyday that I have used it. Right after I get up in the morning, I drink a large glass of very cold water as quickly as I can tolerate it. Within about 10-15 minutes I feel like I have to have a bm. It's kinda weird, but it has really helped me with this situation and I like that I don't have to take harsh laxatives. I hope this helps others!
  16. I have had a few plateaus so far, but I have been hovering around at 90 pounds lost for the last few weeks. I am just over the 6th month mark now. I had my check up at the doctor's office and I decided I wanted to up the intensity of my exercises, add strength training and start planning low carb meals. I realize that to get to where I want which is still 110 pounds away, I'm going to have to work even harder now and really be disciplined to be successful long term. I will be successful!
  17. This uses grated cauliflower instead of hashbrowns! What a cool idea! Low-Carb Breakfast Skillet is a lower-carb option to a potato-based breakfast, made with cauliflower "hash browns". Ingredients (serves 4) 2 cups grated cauliflower (about 1/2 a small head) 1 Tablespoon extra virgin olive oil 1 Tablespoon butter salt & pepper 2 whole eggs 4 egg whites (can use all egg whites) 1 cup shredded sharp cheddar cheese, divided 3 green onions, chopped 3 bacon strips, cooked & crumbled (Can sub turkey bacon) hot sauce (to taste) Instructions Place oven rack to center slot then preheat broiler. Heat extra virgin olive oil and butter in a medium-sized, oven-proof skillet over medium heat. Add cauliflower, season with salt & pepper, and then saute until golden brown and tender, about 5-7 minutes. Meanwhile add eggs, egg whites, 1/2 cup cheese, green onions, bacon, salt, pepper, and hot sauce into a large bowl then whisk with a fork to combine. When cauliflower is cooked, spread into an even layer in the bottom of the skillet then pour egg mixture over top and smooth with a spatula. Cook until sides are set, about 3-4 minutes, running a spatula around the outside to prevent sticking, then sprinkle remaining 1/2 cup cheese on top. Place under broiler then cook until top is set and cheese is bubbly, 3-4 minutes. Use a hot pad to remove skillet from oven then let rest for 10 minutes before slicing and serving.     When I went in for my 6th month check up, the nurse said I may want to limit my carbs in order to help my weight loss. I was taking a look at my food diary on MFP and I definitely need to change up my diet to get to the numbers you all are listing! I looked at Monday's and my protein shake alone has 20! Ekk! I'm going to try being more mindful and see if it helps.

    I was told that besides walking, I could start back to normal exercise at week three. I was told that I could go swimming at that point also.

    Plateau busting workout?

    Hey, I was online looking for workout plans and came across this one from Women's Health Magazine online. The description is: "Shed fat fast and get into the greatest shape of your life with this calorie-crushing, plateau-busting routine". I tried it today at the gym and I have to say, my body really responded. I was sweating and feeling the workout afterwards! It is based upon a set of strength training exercises with blasts of cardio between each set. You can choose whatever machine you want for the cardio portion (I chose the elliptical), but you have to have it at a mid to high intensity while for the amount of time you're on it.   23. I made this last night with some asparagus and mushrooms. Very good and not fishy at all! Baked Parmesan Swai 12 oz Swai Filet 2 tablespoon oil 1 teaspoon fresh Thyme (can use dry) 1 teaspoon Rosemary (can use dry) approx an oz of Lemon juice 2 tablespoons grated Parmesan cheese Directions Preheat oven to 350 degree fahrenheit Pour olive oil into the bottom of a glass baking dish Dust Rosemary and Thyme into oil Assuming your fish is thawed, lay in baking dish and then flip over Sprinkle lemon juice over the fish Dust parmesan cheese over the fish Bake for 15 minutes Fish will be done when it's opaque and flakes easily with a fork. Number of Servings: 3
  24. After I had surgery, I noticed my vision decreased. Thankfully, this was only temporary. It lasted about a week and then went back to normal.

    IUD

    Have any of you used Paraguard? It is a hormone free IUD. I saw a commercial for it and was wondering about getting it.
