Tried this last week and it was a hit ... and it's high in Protein. According to my calculations it's 387 calories and 21g of protein (for 6 servings). I know it's a bit high in calories, but for now, I'm eating it pretty regularly because I can't seem to get enough protein or calories. Warms up well and you can even refrigerate over night and bake the next day.
4 eggs
1/2 c. whipping cream
1 tsp. sugar (I used splenda)
1/2 lb. Monterrey Jack cheese, shredded
2 oz. light cream cheese, cubed
1 c. light cottage cheese
3 Tbsp. butter or margarine
1/4 c. chopped green onions
1/2 c. flour
1 tsp. baking powder
In a bowl, beat eggs, whipping cream and sugar together. Stir in the cheeses and mix well. Melt butter in small skillet and lightly saute onions; stir in flour and baking powder (will be crumbly). Combine mixtures and blend well. Pour batter into a greased 1 1/2 quart casserole dish and bake at 325 degrees for 45 minutes (if refrigerated, bake for 1 hour).
