grilled veggies on a stick!
eggplant, zucchini, asparagus, broccoli, sweet onion, carrots, portobello, sprinkle with some olive oil and spices and grill to caramelization!
eat em off the stick, or toss em in a bowl with a drizzle of balsamic vinegar/glaze and some buratta or fresh mozzarella or firm ricotta and go to town. #yumYUMyum
if you want a bit more protein, grill up some shrimp as well, or, my own personal fave: add some anchovies if eating out of a bowl (yes, i realize anchovies are not for everyone 😜)
(yikes...now i just hyped myself into going grocery shopping for some veggies to grill...)
