D'Ann's Version of Chili's Southwestern Veg Soup

List of Ingredients:

 

Lg Box of Chicken Broth (Swanson is Best)

Can of red Kidney Beans

Can of Diced Tomatoes (14.5 oz)

Can of Green Chiles

Pkg of Frozen corn

Pkg of Frozen Green Beans

1 onion sliced (Itailian onion best)

Can of Tomato Sauce

Garlic Powder

Chili Powder

 

 

Mix all ingredients in large stock pot and bring to a boil.

Simmer for 45 minutes

 

 

Since I am still on liquids only. I let my soup cool completely and then puree it in the smoothie maker. (if you don't let it cool, the blender will explode, don't ask me how I know) took me 2 hours to clean the kitchen.

 

 

If you have trouble with corn, you can change the frozen vegetables

 

 

I have made it with Birdseye Frozen summer medly and it was really good.

 

 

If you want to add some zing add a can of rotel tomatoes.

 

 

Pre cooked chicken fajita strips may be added to give some protein.

 

 

To serve you can add corn chips and shredded cheese. But I leave these out as I am afraid of the chips and the cheese I don't want the extra calories.

Thanks for the recipe - sounds yummy. Just waiting for it to get below the 90's here in Texas and I'll try it out!
